Hello, it's Joconde. This time, I've put a lot of effort into making an orange pound cake recipe. To be honest, I pulled out a recipe I made a few years ago and made some modifications and improvements. I've never made an orange pound cake video before. Honestly, I felt hesitant to share this recipe because I treasure it, but in the end, I decided to share it. So, everyone, please make it! It would make me feel accomplished.
The pan I used here is a mini cube loaf pan. I've always wanted to make a true cube pound cake, and fortunately, this pan has a lid, so you can bake a perfectly cube-shaped pound cake. Detailed instructions are provided in the video, so please keep that in mind when making it. Of course, you can bake it without the lid as well. Just adjust the baking time accordingly.
For the butter, use the butter with a clean taste. Fermented butter or grass-fed butter is great for imparting a rich flavor in heavy cakes like chocolate or caramel, but it may not be suitable for citrus-flavored pound cakes. It seems to compete with the pure orange flavor and adds unnecessary flavor.
I added orange jam to the pound cake batter. Since the orange jam is made by combining acidity and sugar, it helps keep the cake moist for a long time. Plus, unlike using just orange juice, using concentrated oranges in the jam gives a distinct “ORANGE” flavor.
It's natural to enhance the flavor with candied oranges when eating with them, but don't discard the syrup from candied oranges. Boil it with some water, cool it down, and then brush it over freshly baked, warm pound cake. Then let the pound cake cool completely. This will enhance the flavor and moistness once again!

2 small oranges
200g sugar
300g water

8g orange zest
125g orange flesh
38g sugar
♥︎Orange Pound Cake
120g butter
85g sugar
2 eggs (102g)
1 egg yolk (18g)
120g cake flour
4g baking powder
1g salt
80g orange jam
5g vanilla extract
♥︎Syrup
25g candied orange syrup
25g water
*Boil both ingredients together, then cool before use
