That actually works. I like my [safe to eat] meat practically raw. But nobody else does so it's like working in a restaurant agian for my in-laws. My wife's family is 10× bigger than mine. Not an issue....I only cook on Sundays for family dinner because I love it and my family and friends. Welder/machinist for a living now. You don't need a fancy expensive prob temp gage. You can figuer out how well done it is by poking it. Your hand is a good gage to get the hang of it. Chef Ramsey does and yells at others about it all the time. "Fell that"

They have these decorative mosquito light fixtures you can install in your van. They look nice like light fixtures and work really well and also catch the mosquitoes in a container. Research it. I have installed some and they work great. Love your vids.

Taku- LOVE your videos, I'm addicted to both your fishing adventures and your masterful chef skills. Tell Jocelyn-- I also have nasty reactions to mosquito bites. Sometimes they're impossible to avoid. A friend advised me to take Benadryl allergy tablets to stop the allergic reaction. It really works, at least for me. Hardly any reaction, or itching or welts. It's like you're suddenly immune to those nasty buggers. And if you have bug bites that are itching later on, the Benadryl Extra Strength itch-stopping creme works wonders. Don't let those nasty little vampires mess up your fun!

So happy for you & Joslyn & wishing you both the best. I did have a question for you, though, about your ride! Is that a Ford Transit? If not, what make/model? How do you like it and has it held up? I sharpen knives professionally when I'm not in the kitchen and I've been thinking about getting a tall van work truck for years now if I ever switch to sharpening full time. Would love to hear your thoughts as to reliability and value compared to say the famous Sprinter. Hope to hear your thoughts and thanks for what you do!

Check out the brews local to Oregon's coast. Newport has a local brewery called Rogue. It's right on the water nest to the boat harbor. They make a long list of beers. I hauled a load from there to the east coast, Dead Guy ale, Morimoto ale. I never got to sample them but would like your input. The location was very scenic.
