From my kitchen garden to plate - High protein palak tofu quinoa khichadi. Khichadi has always been my go-to dinners when I’m looking forward to have something light and easy to make. Today when I harvested some palak from my terrace garden I decided to add it to the Khichadi, where I also added tofu for some extra protein. So traditionally khichadi is made with rice and different choices of dal, so I replaced rice with quinoa to make it a protein rich meal. Well, it all ended up into a super healthy nourishing and high protein dinner.

Recipe
3/4 cup Quinoa
3/4 cup any dal of your choice
1 cup tofu diced into small cubes
1 cup blanched palak
1 medium onion
1 medium tomato
2tbsp minced garlic
2 to 3 green chilies
1 teaspoon red chilli powder
1/2 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon cumin powder
1 tablespoon ghee
1 lemon
Salt as per taste
Method:
First blanche the Palak in hot water and puree it. Soak the quinoa & Dal for 5-10 minutes, and wash them thoroughly in order to remove the bitterness from quinoa. In a pan add ghee, jeera, onion, garlic, green chilies and sauté until the onion turns pink. Later add the tomatoes and all the masalas and sauté for 2mins. Now add the Palak puree, tofu, quinoa, dal, salt and pressure cook for 5 whistles on medium-low flame. Once the khichadi is cooked, squeeze some lemon juice and you palak tofu quinoa khichdi is ready to serve.
