the more "powdery" the corn meal the faster it seems to clump! I always wondered if you could put the hot mix in a mixer and attach the whisk attachment and then slowly add the corn meal. Some day when I'm bored I'll try it :)

made it this weekend. May try adding brown sugar next time. I used Almond milk--because that is what I use for my milk. If you add raisins or currents it may be more Indian pudding. Thanks again.

Sounds delicious. I saw one modern interpretation of this dish where they sprinkle granulated sugar on top and caramelize it with a torch like you would for crème brûlée, I’ll have to try that sometime. 🍻
