Pasta Salad with Tomato, Mozzarella & Green Beans

This dish is a always a family favorite, tossed with a delicious tomato pesto dressing, perfect for a Memorial Day celebration. The recipe is easy to multiply, it keeps well, and, most importantly these days, it’s economical. This pasta can be dressed several hours ahead, but hold about half of the dressing to toss in at the last minute, since the pasta will have absorbed much of the first batch. Thank you Lidia. Pasta salad is my favorite salad to make. The flavor of the pasta is never overwhelmed no matter what you add to it. I watched a show on The Food Network ages ago and the host visited different viewers in their homes. One of the viewers s made a pasta salad and he put everything in it but the kitchen sink. He had vegetables, pepperoni, cheese, and of course seasonings. I love potato salad but potatoes are delicate to me and the potatoes are overwhelmed by the other flavors in a short period of time. Pasta salad last longer and gets better with time I think. I didn’t mean to go and on. Thanks again ❤️

I live alone and make a tuna salad with pasta. But I like this version and will try it. I don't like to cook much on hot days here in Florida and so I will try this recipe but only one half the amount. I don't like to make too much or it will spoil. Thanks Lydia.
