Yummy!! This is so delicious looking. I have made banana enchiladas, but never thought to try with peaches. I just put sliced bananas and cinammon sugar and fry it up in a little butter. YUM!!

I make mine similar. Except I use fresh , frozen or canned peaches and make a roux with butter, brown sugar. Cinnamon. Sugar and vanilla. And. Corn starch to thicken it. Into a pie filling. Sometimes Ill cook on the stove and add cut tortillas.... Shes right just about any fruit can go into this. This really is delicious!!!

I think that I would buy a second can of peach filling and use half of it in the sauce. You can make more enchiladas with the rest. I think my favorite would be with strawberry filling. I even saw mango filling in a can yesterday at Dollar Tree. I was thinking that a dessert enchilada with a buttermilk pancake would be wonderful. Maybe make it in a pan on the stovetop with some butter as the pancake would not hold up to being soaked.

I love peaches I buy alot of pie filling my grandson loves pie cinnamon with a sprinkle of smoked paprika yum yum ! apple would be my choice u ever think about using pineapple or apple juice in place of the water

You can use any pie filling. The brown sugar I would use for apple, the peach, and maybe even cherry. But not strawberry. With the strawberry, you can use regular sugar.
