hi sorry quick question, would it be fine to use milk instead of cream, and if not what kind of cream do i use? and what if i’m using milk chocolate?
@inthekitchenwithelisa2 жыл бұрын
Hi there, no, it wouldn't work the same way with milk as milk has a really low fat percentage. I always use a 30% fat content whipping cream, but you can use anything similar to that. With milk chocolate you would need to adjust the ration of chocolate to cream. I would start with a 2:1 chocolate to cream ratio and adjust as needed.

Hello thanks for the recipe, but if I have no cream what will work instead
@inthekitchenwithelisa Жыл бұрын
Hi there, I do not unfortunately have any personal experience with using anything else than cream. For the right texture the liquid that you are adding needs to have a specific fat content. I did some research and found that you can try using coconut milk/cream (the full fat one) which should give you similar results due to the fat content. I also found that you could use full fat milk, but I have never tried this myself and I am not sure it will make the ganache as runny as when you are using cream, so unfortunately can't tell you this option would actually work.

What kind of icing do you need to ice the cake before you put the drips on? Buttercream, fondant???
@inthekitchenwithelisa4 жыл бұрын

If you check the i-card of the video or the end screen then you will find the direct link to my swiss meringue buttercream tutorial. Alternatively you can also use American buttercream. Does the ganache (the drips) harden? I have some people who are dairy free but the person I’m making the cake for wants drips and I figure if they harden they can just pick them off. Also if we don’t use any cream will it harden and solidify once refrigerated? Please answer.

Hi Brooke, when you add cream it doesn't go as hard, but I think you should still be able to remove the chocolate drip when the cake is chilled. Never tried that, but I pretty sure it would work. I have never actually made it without cream so cannot say how it would work as a drip, but it would definitely harden more than with the cream. I hope this helps.

Hi Elisa from Australia, if I wanted to try to colour a white chocolate green for a drip would I add as much cream or even need cream? I would want it fairly firm & to hold up in the fridge about a day ahead. Thanks
@inthekitchenwithelisa4 жыл бұрын
Hi there, white chocolate can be a bit tricky. You should use much less cream, the ratio is about 3 parts chocolate to 1 part cream depending on the chocolate you use, so start with less and add more as needed. Colouring chocolate can also be tricky as it needs specific colours, so icing colour might not give a good result, every time I've tried it has had these little dark spots of colour and hasn't really mixed through. As I couldn't get hold of food colour for chocolate I used powder colour mixed with coconut butter (not oil, but butter) and added that to the chocolate and that worked really well. The chocolate firms up as it cools on the cake, it doesn't need to be refrigated for that necessarily. Sometimes long fridge time can cause the chocolate drip to crack, so I wouldn't really recommend it. I hope this helps😊 If you will have any further questions let me know 😊

You should only let it cool a little, so it's not hot, but not until it gets cold. If your cake is really cold and the ganache is just a little warm it's not a problem. Also you can just keep on adding more cream to make it runnier.
@TracyMohlala-t3f Жыл бұрын
So if the cake wasn't cold it wouldn't stop being runny?
@inthekitchenwithelisa Жыл бұрын
Depends on the consistency of the ganache. If you want thin drips like on my cake, then it is important to have a cold chilled cake as otherwise the drip won't stop being runny, as you guessed. 😊 Also it is easier to work with a chilled cake. If there is anything else I can help you with, let me know 😊

thank you for this video! just got a question do you let the ganache get cold before putting it on the cake?
@inthekitchenwithelisa4 жыл бұрын
Hi Shuheda, no, not cold. I do allow it to cool slightly but only slightly, so it's not hot right from the microwave. Also I always make sure my cake is really cold and so the contrast of the cold cake also helps the drips to set when you are making them. I hope this helps😊 If there is anything else I can help you with let me know😊

Can I use milk
@inthekitchenwithelisa4 жыл бұрын
Hi there, no, milk wouldn't work as it has a really low fat content. You need to use a cream with 30% fat content.

what would you do if the mixture is too thin
@inthekitchenwithelisa4 жыл бұрын
Hi there, if it goes too thin you can add in some more chocolate and melt in again. Just make sure that you don't heat it too long, better in short intervals until the chocolate melts.

How long did you chill the cake before adding the drip?
@inthekitchenwithelisa3 жыл бұрын
Hi there, until the buttercream is cold. You can test by touching the surface and if it is hard and your finger leaves no mark on it it is chilled long enough. Takes me about 30-60 minutes in the fridge.

Does my cake need to be chilled?
@inthekitchenwithelisa2 жыл бұрын
Hi Kimberly, yes, it needs to be chilled so that the buttercream/ganache layer is hard to touch. I always make a "touch test" and if your finger doesn't leave a mark in the buttercream then you can start with the drip. I hope this helps😊

Can I use double crepe or should it be normal creme
@inthekitchenwithelisa4 жыл бұрын
Hi Madeleine, the cream I use has 30% fat content, I don't know whether that is single or double cream. I would suggest to use the one with 30% fat content for the best results.

How long can we store the ganache
@inthekitchenwithelisa4 жыл бұрын
Hi Haizal, I make mine always just when I need it to go on the cake, never really stored it. I am sure you can store it at least for a couple of days in the fridge in an airtight container. You would then need to melt it again in the microwave or a water bath to bring it to the right consistency. I hope this helps 😊

Hello.. Can i use all purpose cream?
@inthekitchenwithelisa4 жыл бұрын
Hi there, unfortunately I can't say for sure as I haven't ever used this kind of cream. You can try, but the end result might be different. I would also reduce the amount of cream that I add first as you can always add a little more as you go.
