Celebrate the upcoming Mid-Autumn Festival by making mooncakes in the shape of cute little pigs. These delicious and novel cakes have a sweet lotus seed filling wrapped in a layer of light dough. They are so much fun to make and an activity the whole family will enjoy!

Ingredients:
for the Filling:
1 cup dried lotus seed
1 Tbsp baking soda
1/2 cup breakfast sugar
1 tsp vanilla sugar
1 Tbsp peanut oil
for the Dough:
1 cup all-purpose flour
1/4 cup cake flour
1/3 cup syrup (breakfast syrup or golden syrup)
2 Tbsp peanut oil
1 egg yolk
for Rolling the Cakes:
1/4 cup all-purpose flour
for the Piggies Eyes:
24 black or red beans
for the Egg Wash:
1 egg yolk
1 tsp water
1/2 tsp sesame oil
Yields: 12 cakes

½ m. cà phê dầu mè
Được: 12 bánh

Hi Jesse, you can use a breakfast syrup for pancakes, french toast, etc. It should be nice and thick. Lyle's Golden Syrup from England is really delicious too if you can find it. Happy Baking!

Hi, it may vary depending on the syrup you use and if you were generous with the flour measurements. You can add a little more syrup and oil. A little dry is ok--when you pinch the dough together it should stick and not separate. Good luck!

I use Safeway brand "Old Fashioned Syrup" purchased from Von's (or Safeway). Or you can use Lyle's Golden Syrup. Both work really well in this recipe. Let me know how these turn out for you :)

If you can't find lotus seeds, you can always use (your favorite) mung bean (see my channel for Shortcut recipe). After making the mashed mung bean, add the sugar and then cook it in the pan as I show in the video. Everything after that is the same. Good luck!

Hi Dee, Garbanzo beans/chick peas are a good substitute for lotus seeds. You can make a bean filling using mung, red or black beans. Additionally, taro root makes a great filling too. hello, can I use shortening oil instead of peanut oil? I have a family member that have an allergy to the peanut or peanut oil..

The black beans are inedible. Is there any substitute for the beans? could we use black licorice pieces or would licorice harden during the baking process?

+Wade Rawluk Hi Wade, yes, the black beans are not to be eaten and for decoration only. Licorice would melt during baking. I tried different candies in the past and they melted or would run and then the piggies looked like they were crying....lol.

+Thao Hieu Dang Hi Thao, all-purpose flour is plain/regular flour. Self-rising is all-purpose flour plus baking powder and salt. Hope that helps.

You can substitute with vanilla extract. You can buy vanilla sugar at any Vietnamese grocer or online amzn.to/2al9a8o

Hi. Thanks for sharing. May I ask 1) did u wash the black beans for the eyes. 2) did u cook them? I asked because I think cooked or soaked beans may become mouldy after a few days. Pls advise. Thanks

H Mona, the beans for the eyes are just decorative. We don't eat them. I rinse the beans with water and dry them before applying to the cakes. Hope that helps.

I'm very curious as to the reason they can't be eaten right away. Are they extremely hard or something? I want to make moon cakes because I love attempting various cultural recipes and I think this would be a great recipe for me to try. How many days is appropriate to let them "rest" before consuming and are they sweet?

Hi James, right after baking they are crispy and crumbly--not hard. Letting them rest allows the oil to permeate and soften the dough. They only need to rest overnight. There's nothing wrong with eating them right away. Try one about you make and then the following day and let me know what you think. Good luck!

I wonder whether your crust is tough? I notice that all the recipe from Vietnamese food blog use so much oil and I'm really scared of oil. but they say that oil in filling is necessary for the crust to absorb then soften. however I cut down half of that amount it's still ok. I see that you use just a tsp. so how is your crust? I really really want to use the least amount of oil.

Hi, yes the traditional recipes use a lot of vegetable oil. I've cut back on a lot of the oil and so my cakes are not as oily and much healthier. The crust on my moon cakes are soft. Once they are stored overnight, they soften naturally from the moisture. Give it a try and let me know what you think.

Very cute! But I need to ask, do u brush extra eggwash on the nose and ears? They turned out darker than the body.

Yes, I brush egg wash on the nose and ears but just a bit. They brown up faster because they stick out. If you'd like more even browning, you can cover with bits of foil and then remove later. Good Luck!

Hi,i've seen some of the recipes for making the dough require alkaline water, i dont know what is alkaline water and i can't find alkaline water at any markets here. so i gonna try your recipe, thank you for sharing! ^_^

Hi, yes some of the recipes use lye water or alkaline water which is both a preservative and a texture enhancer. I am concerned with the health risks so I omit it. You won't miss it. Just let the cakes rest for a day or so and they will soften naturally. Good Luck!

RunAwayRice I have heard, I may be wrong, that you may make your own alkaline water, just add a bit of lemon or a tiny (tiny) bit of baking soda to regular water. All it does is cut out the natural acidity of the water. Not sure if it would apply here or not...just thought it might help! :)
