What does the glucose component do ?

Generally, glucose syrup is a stabilizer and prevents the sugar from forming crystals when it cools. This lets you maintain the smooth texture before you bake it. You're basically creating a very light caramel, letting it set, and then finishing the caramelization in the oven.

It will be solid depend on how you make it, depend on amount of agar. You can do it how you like end of the day. Few days in the fridge

Depending on the temperature and size, it will probably take 30-60 minutes. I would not worry about the time, but rather check to see if it is cooked.

I dont get it chef.. you mean, because coconut got thicker viscosity than water, so u reduce the amount of agar for coconut milk to get same consistency with water with 4 gram of agar??

Good improvement. I know that you advocate "according to your own taste". But it is a very expensive and tedious work to figure out all on your own. Here you gave the basic proportions which saves a lot of time. However, you should ABSOLUTELY tell (read "stress to") people to never flambee under the fan over the stove. It is easy to forget that the fan is running. No desert, or other dish, is worth burning down your home. And possibly the entire rental building.
