You can use sliced ginger to remove some fishy taste of the fish. It adds a layer of flavor too.

You have to clean the fish (whatever fish or meat) with salt; rub at leadt 5min or more depend on the size to take away the smell and slimy texture specially those fish that are raised on a farm. Next is boil sibuyas, kamatis, luya, lemon grass in a small amount of water first for 8min or until you smell the flavor of everything you've put in there. And then add enough water as your broth. Try not to over stuff with veggies not to over power the main ingredient fish or meat. If you want to cook all veggies in sinigang it's better if you just cook "sinigang veggies" there you can add all your favorite gulay. Nice try...👍👍👍

Listening to you reminds me of my Dutch teachers in high school in the Philippines. They were priests who belong to the MSC or Missionarii Sacratissimi Cordis. Add a little miso and rice water instead of just water (the water from when you rinse the rice when you cook rice, if your rice is clean you can use water from the 1st rinse if not use from the 2nd rinse) I guarantee its going to taste better

If God willing, when you go back to the Philippines, try to visit my hometown ILOILO. We have a dish like sinigang. But we don't use tamarind as a Sour Agent. Instead BATWAN. it's more subtle and more delicious.

In Pampanga our rural folks usually switch to sinigang with miso when Salmon is used ( with ginger but optional). The kangkong is replaced by mustasa (mustard leaves) or both can be used.

so there are Salmon swimming in the rivers of Pampanga? Mustasa is no longer sinigang. That is a different dish. Otherwise all soups are called sinigang. How do you feel when people chop cabbages and carrots and call it Sisig after putting on a sizzling plate and dressed it with raw egg yolk. The Rural Folks of Pampanga, oh must be the expats who can buy Salmon from the US bases. Ah okay, that explains all those ingridients from foreign countries.

Ask Capampangans how they prefer cooking that type of fish for their sinigang. Ever tried sinigang sa bayabas? Sinigang sa Santol?Sinigang sa Camias? By the way, No. We prefer our Sisig how we like it here no exemptions. Adding eggs or mayonnaise is sacrilegious.If they like it that way then that is their preference.

@@eduardochavacano To be fair. Yes, the American Clark Air Base in Pampanga who had settled here back in 1903 have a significant role for the ingeredient available. Sisig was born out of the ingenuity of a local Cabalen who made use of a Pig's head - Americans considered as scrap meat - and made it famous out of necessity. Now for the Salmon heads? I don't have to guess how long it had been available here.

So it means he cooked a different dish and the video title of Sinigang no longer apply? We use mustard leaves on sinigang sa miso on our salmon. End the world? So what is the menu for an authentic Sinigang? The answer for me?. It is authentic as to the home region where you cook. Where they incorporate the local produce that is endemic to their region thus making it their version of a sour soup uniquely their own.

Just saw your vlog on my feed and yes, we do cook Salmon as sinigang, too. Head parts & some belly were so cheap here. If sinigang powder is not available, you can use lemon/cider vinegar/ kumquat fruit or kalamansi in tagalog which was very abundant in foreign countries. You’ve got all the veggies just right but seems so “crowded” already. You can even add taro as optional and it seems you put spinach leaves as substitute to kangkong. You can use sweet potato leaves also if you wish but only leaves huh? 😁 With fish, sometimes I mix a bit of little ginger for a better taste or no fishy taste/odor.
