This is a recipe for Poverty Pancakes that goes all the way back to The Great Depression, maybe even farther. My Mom grew up during The Great Depression. Like many children did at the time, she dropped out of school in the mid-1930's, at the age of 14, to get a job and earn money for the family. She became a cook and housekeeper for a wealthy family. That is where she learned how to cook American food and when her life-long love of collecting recipes began. This is a very simple recipe to make and requires only a few very basic ingredients. It even has a story that goes along with it.

When Grandpa tried the pancakes, the stack on the left of the screen were the ones cooked in a little butter. The ones on the right were cooked on an empty griddle. Cooking in butter does give them a little more flavor but they are perfectly edible either way.

I love all these depression era recipes. I miss watching Ms Clara as well on Great Depression cooking channel. It's so interesting to me to see how our families survived. Not just American recipes but British and Polish one's was WW2 when they had to get creative

I love the story that comes with these. That's a very smart woman, you can tap maple trees and have free syrup so the most expensive thing is the bit of sugar and the coffee. I believe a cup of coffee cost 5c during the depression but if you are out hunting or fishing, it starts raining and there is a random little cabin that will give you some hot coffee and pancakes for a quarter you would probably take it. She said she was making $4 a day, that's impressive.

Much respect for the ingenuity & patience in mom’s & dad’s back then in providing for their children. I know kids can be bratty and ungrateful- it must have been especially hard holding it all together

In large families everyone would help out during hard times. My Mom quit school and went to work at a young age and all her older siblings did the same. When they would talk about what they had to do to help the family not one of them complained. Everyone back then were hard workers.❤️Grandma👩🏻

Yes I know about salt. When my Mom had to be on a no salt diet and I would cook her meals. I learned all about salt and how many foods had natural salt. Also how many prepared foods in one meal will give you your day amount of salt. It was unbelievable. Fast food is the worst. I thank you for watching and for your concern. ❤️👩🏻

I must have watched this 10 times cause I love the story so I had to look into it. The average wage during the depression was 10c/per hour, if you were very lucky and had a good factory job you could earn up to 30c/per hour. She said she could make up to $4 per day, that's over double the pay of the best jobs at the time. Even on bad days she was earning more money than a man doing heavy manual labor. Id hire her in a heartbeat to increase efficiency and figure out how to make money for nothing. If 'Dragons Den' or "The Apprentice" were during that time she would have been the most successful person on them.

I am glad you looked into the wages I enjoyed your comment. My Parents would tell me what they were making an hour years ago and it was little pay. The time my mother and her sister were making good money was during WWII. They both were defense workers and worked on the planes since the men were fighting the war. They were known as Rosie The Riveter. I don’t think many are left because most of them passed away. I have to tell you family members would tell me if they went to see a movie it was a nickel and that was a lot of money. Yes I agree she would have been the most successful person on The Apprentice. At 0:08 you show a clip from a diary of a wife from the Depression; she mentions the sum of $4.00. The Depression lasted from 1929-1941, so in the middle the Depression (1935) $4.00 would've been the equivalent of $86.50 in 2022! By the way, that also means the hot coffee and pancakes for 25 cents mentioned were about $5.50 in 2022! Not a bad deal, if syrup and butter is included! ~_^
