The recipe is right on the money. I've been enjoying the foolproof results that come with weighing dry ingredients. I doubled the recipe to make 1/4 sheet cake, and got enough extra batter to fill two cereal bowls (1 of which I devoured straight out of the oven! HA!). At first I was a little worried when the batter seemed somewhat thinner than usual as I poured it into the pans, but I turned the temperature down to 335º with the homemade cake strips, and 40 or so minutes later, PERFECTION. 2 out of 2, John! Thanks for making cake baking easy again! Let's see which of your recipes I'll try next...carrot cake, perhaps?

I have this cake in the oven as I type. I made a couple of alterations. I don’t do anything with egg whites so I just used 4 eggs. Not sure what difference it’s really going to make but I hate wasting stuff. I also used two 9” cake pans even though you said to double the recipe if you do that, I didn’t. It seemed to be more batter than you make up in a box mix so I thought I’d do it that way. I figured in the end if both pans didn’t really get filled up at it baked, I’d only use one pan next time but at the 10 minute mark they’ve risen a BUNCH so two cake pans it is ! There’s only two of us in this house anyway. I’m excited about how this will come out. Thanks so much !
