there are about as many recipes for those cookies as there are households who have them as a staple. - The way i do them is quite similar, yet a little different. So, for anyone feeling like experimenting: - two more flavours, same amount: 100% cocoa powder and ground ginger (also a pinch of salt ought to be in every cake or cookie dough). - heavy cream instead of butter. - heat the spices up together with the honey, then add the rest - eggs last so they dont scramble. - use rye flour (up to 70% of the total flour used) - use wet hands to roll the dough-balls - it can get very sticky otherwise. - lemon-and-sugar-glaze instead of powedered sugar

Very similar in my household. Only differences are that we use white pepper instead of black, and no cocoa powder. And when making the glaze, we use milk instead of water (and no lemon juice) to give them a nice shine

AMAZING recipe!!! I made Pfeffernusse years ago with a complicated recipe and burned out a hand mixer - I swore I'd never make them again. Then I saw your recipe - it was so easy to make and they turned out perfectly! I used a measured disher scoop and they were consistent in size and they baked beautifully.... taste just like my German grandmother used to make. Thank you, Anna for this recipe. It's definitely a winner and a welcomed addition to my cookbook

Pro Tip to make them moist and edible, because they are hard as a rock after baking. Slice an apple and half-dry the slices in the oven. Add them on a piece of parchment paper in the box you keep the cookies and they will absorbe the moisture emitting from the half-dried apple slices. Take care they do not mold by adding lemon juice on the slices before and after baking. Not only will the peppernuts be soft, they will also absorb the aromas from the apple, which makes them extra nice.

This almost exactly my great grandma's recipe. We just don't use any sugar, just (more) honey. They're the best cookie for the holidays. ❤. Great to come across your video.

When you said black pepper I didn't bat an eyelash, lol. The first pumpkin pie I made from scratch last year called for, you guessed it. Black pepper!! Its crazy. I can NOT stand to eat black licorice but fennel and anise? Not a problem, 🤷♀️...

For sure! Traditionally, the dough is actually supposed to sit for a few days or even weeks. This helps mature the flavour of the spices. Just keep it covered in the fridge (not the freezer) and save adding the egg until you are ready to bake it

Honey 💩 Granulated sugar 😀 Dark brown sugar 😃 Butter 🙆 Egg ⛷️ Egg yolk 🌲 All purpose flour 🤞 Baking soda 💆 Salt 🤼 Cardamom powder 🌹 Allspice powder 🤳 Cinnamon powder 💁 Clove powder ⚡ Pepper powder 🥀 Aniseed powder 🪶 Scoop out the batter and place the batter on the baking tray 🕳️ Bake the cookies for about 14-16 minutes 👶 Roll the cookies in icing sugar 🕺

Hey Anna, I'm not a huge fan of overly sweet desserts so can I reduce the sugar in all your dessert recipes? Would the baked goods still be good?

Yes yes yes. My great grandmother's recipe doesn't contain ANY sugar. 1 cup honey 1 egg lightly beaten 3 tbsp shortening 3 cups sifted flour 3/4 tsp each: Allspice Mace Cardamom Baking soda Baking powder Salt 1/4 tsp black pepper 1/8 tsp anise Warm the honey and shortening together in a sauce pan Pour egg and honey mixture into the dry ingredients Mix with a spoon Rest the dough 10 mins Roll into 1 inch balls Bake at 325 for 13 mins Rest cookies overnight Toss with powdered sugar in the morning
