The seeeeeeds roast the seeeeeeds, awesome looking dish but I wish you included the roasting seeds step in the beginning with the pumpkin

Rule of thumb, for sturdy vegetables like pumpkins, go with 180°C for about 40-45 minutes. You should be able to pierce a fork through the shell.

Would almond/oat milk work for replacing the heavy cream. Not much of a coconut milk person but I know the density consistency is closer. Thanks in advance!

Cashew cream is good, if cashews don’t play with the guilt due to processing methods
