Traditionally made with bulgur wheat, Tabbouleh salad is one of Paula's favorites. In this video, she will substitute quinoa for bulgur wheat. The herbs and the dressing are the stars of this salad recipe, adding a lot of freshness. This salad is great on its own or with grilled chicken, meat, or fish.
Ingredients
1/2 cup quinoa
1 cup chicken broth
1 bunch curly parsley
1/4 mint leaves
¼ English cucumber
3 scallions
1 large tomatoes, seeded
Juice of 1 lime
¼ cup extra-virgin olive oil
¼ teaspoon salt and pepper, or to taste
