Here’s a little tip for bacon: rinse the strips in cold water before cooking. It will prevent the bacon from shrinking so much.

I am in BIG TROUBLE! When I saw that cream cheese going at the bottom you got me! The Jalpenos and the cheddar and Monterey ... now I am in cheese/ quiche heaven! I love to cook and cooking calms me down but seeing your step by step makes me want to try them. I have to say, your husband is one heck of a patient cameraman! I would not resist all that aroma and goodness. I am going to say it in Italian BEN DI DIO! Seriously, I am listing in my head what I have and dont so I can make this quiche. I have seen many especially French recipes but yours is a kick above! Wow! Thank you for posting. I do not know when I will make this quiche cause it got my "I want make this" going but when it happens I am going to follow your video religiously... Thank you.

Haven't seen you for awhile as I got very sick last year and ended up in the hospital four times..unable to eat and barely able to drink water/fluids and lost over 60lbs! Oh my that quiche looks devine. I've never put egg in pie crust and must try your recipe. The tip on using sugar as blind bake weight is pure genius since it can be reused. WOW! Making the dough for the pie crust seems so very simple and easy! And the finished dish looks so delicious. Since I like "spicy-hot", I would have eaten the very tip of the piece you cut for yourself with the slice of Jalepeno at the tip. Looks so yummy. Omgoodness!! They say you can't teach an old dog new tricks! I am def going to make your pie crust but this old cook has never heard of a "blind bake". We used to make Quiche at least once a week, at the hospital, the pts and staff loved it! I made m, spinach and mushroom or Broccoli and Bacon. Lots of different combinations! Thanks for this Rachel, yours look wonderful.

Yes my friend, do try it!! Use salt and seasoning to your liking, I'm always careful with it because of my Ron, but you adjust it and dint over do the 30 minute bake, remember it's a custard, (tip) enjoy it and let me know how it turn out, thank you so much.❤

Goodness gracious you're speaking my language with your delicious quiche. I use my baking beads whenever I have to blind bake a crust but really like your tip about using sugar which won't be wasted. Thank you my dear friend, it also brings out a delicious taste in the sugar, I always used beads or beans and rice, the rice was smaller and it would spread well, but I couldn't use them again, so I've stuck with the sugar...Do make it for your Johnny and enjoy every bite, let me know how it turns out. ❤

Hi Rachel! This dish looks so delicious that I could eat it from my screen. I wanted to say I made the chili releno dish from your recipe but found my chilies were falling apart. I think I over cooked them. So then I decided to make a Chile releno casserole...still with all your ingriendients, however I didn't use any salt...due to my husband's diabetic condition...but the cheese makes up for it all in all it came out tasty and good...could of came great with salt....but really I don't need it so I too am adjusting to a non salt life. I don't hv diabetes. His leg was amputated, n the other one is in a black walking thingee...you too hun, watch your diet....it's horrible diabetes!!
