This popular Cantonese dim sum dish is made with shredded radish (daikon)cooked in seasonings and then wrapped in Asian-style flaky laminated layers puff pastry. The pastry is deep-fried to crispy perfection.
Radish puff recipe:
Ingredients:
For the filling:
350g peeled radish (daikon)
50g ham
1/4 tsp salt
1/2 tsp sugar
some green onions
1/2 tsp roasted sesame seed
1/2 tsp sesame oil
To thicken:
1 tsp corn starch
1 Tbsp water
Water dough:
100g all-purpose flour ( 9-11% protein )
10g icing sugar
3g sugar
40g water
30g peanut oil OR lard
Oil dough:
100g cake flour (7-9% protein)
50g lard OR peanut oil
1 egg
sesame seed
