I have always wanted to go to Italy and learn more of the way they cook... especially on the "Peasant" side of life.... Rich Butter... meat... sauscs... fresh baked bread... good wine.... even better Limoncello... half of my side of the family is Italian... When I had my little cafe... called "Mama's Kitchen" ... Anchovy is so under rated. I use it in all pasta sauces. Love it with lamb. That umami of anchovy is bomb:))) Of course whoever made Worcestershire sauce obviously knew that it was amazing too.
