About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Awww how sweet! He brought sake over to honor his friend.... And the food was so good it reminded him of his mother and he broke down. Bless his heart!! What a wonderful friend he is! Beautiful soul! The dish looked absolutely amazing. I wish I could find sushi this good in Florida. Ahhhhhh.... Your videos and the dishes make my stomach scream at me every time I watch them.

Interesting way to scale it. I have never seen that before. In Hawaii growing up, we usually cleaned it at the place it was caught. Scaling makes a mess at indoors sometimes. Easiest way to minimize the mess is to fill a bucket or the sink up with water and scale it submerged. Cool trick I learned almost forty years ago. That fish is one of my favorites either sashimi style or in soup. Good stuff!

I have also seen the smaller ones cleaned out of inards through the mouth and stuffed. The small ones are really good deep fried extra crispy too! Great...now I want some 😢

Th "big eye snapper" is also called a Toro (not to be confused with the fatty part of a tuna) and are found in our local Miami and Bahama reefs too. You can catch them night fishing the same way you would catch most snappers and are always a welcome catch! Or you can buy from a wholesaler imported from Japan... LoL FABULOUS either way. But Hiro, $21.00/lb whole? You are a MASTERFUL fillet person and can maximize the yield for sushi, which is about 50% yield of the whole snapper which means the skinless, boneless fillet is actually $42.00 or $43.00 per pound! Which makes it more expensive than Lobster and would have to be a $150.00-$200.00 sashimi platter at a restaurant! I better go fishing! Hiroyuki, that looks amazing. Your masterful art never gets old and keeps me inspired and hungry! Thank you always!

I like to imagine random stories behind youtubers sometimes and i dont know why but my brain is giving me this for their relationship....6 years ago: Hiroyuki was going down the street when he saw him.... Weird homeless guy holding camera bothering strangers and narrating their every move.....Hiroyuki somehow felt bad when he saw strangers pushing that poor guy around kicking him away...so he aproached him and asked him if he wants to go with him so he can feed him. Hiroyuki introduced poor homeless guy to his kitchen where homeless guy went crazy narrating everything. ''Here we have red snapper what are you going to do with it Hiro?''...Hiro just smiled and said ''Good Afternoon'' very softly....and here we are in present day...their friendship stronger than ever....
