Hello, I am back with the usual quick English translations for those who don't really understand Cantonese or read Chinese subs. Remus is making a prawn dish (“Ha” in Cantonese) so being the New Year, he hope everyone will “laugh haha” (siu ha ha) from start of the year to the end of the year. He cuts the yellow onion big to give a good similar ratio to the prawn. For the coarse black pepper, reduce by half of what he’s using if you think it’s too hot. He loves black pepper so he’s using about 2 and half table spoonful. Onion powder is optional but he uses it to enhance the flavor of the yellow onions and black pepper. It’s okay to use that much rice wine as it will evaporate a lot. Stir fry the onions in low heat, Remus takes it out quite early as he likes it with some crunch. Even though he pat dry the prawn as much as he can, but water is still inside the prawns, so be careful with oil splash. When the prawn curled into a “C”, it’s almost done so take it out first. At the end, everything is cooked quickly so the prawn won’t be overcooked. Remus recommends the dish to pair with alcohol, eat with rice, or eat it with friends while chatting and peeling prawns together (like a snack).
