You are such a good doctor and nutritionist with so much useful scientific information, everything based on studies and scientific facts rather than all the hyped BS that goes on these days on social media! And everything is in moderation and makes sense. You explained everything so well without dumbing things down while still giving the biochemical reactions behind the metabolic processes! Thanks for this wonderful video and helpful info, doc. Hope more folks follow you to get real scientific facts and also healthy eating. While potatoes still get such a bad rap, I’ve had to lower my consumption quite a bit as a potato lover, none of these come close to it in taste (even the just boiled version!) 😂 so I do eat them once in a while after refrigerating as you and several have mentioned based on studies.

my 'go to' cooking method for a lot of stuff is steaming. It works for sweet potatoes like a charm. I'll be trying whole squash that way soon. I even steam my egg in a shell for 7 min. when I eat an egg, that is. The Doc mentions having 'learned' to eat carrots. The term learn is worthy of examination. It involves exploration, discovery, and repetition. (imho) right after mentioning carrots and Vitamin A, the Doc talks about eating colorful diversity. The word synergy came to mind along with the question? Which foods to eat together to harmonize and maximize potential? That time I went to tire general and they couldn't get my hubcaps off.🌻

Excuse me, if any diabetic ate high low quality carbohydrate without fiber...they are definitely NOT going to have reduced insulin needs...what are you talking about??? If you are able, please explain how this is so. I am a long time DM2 using keto. I just discovered that fat raises insulin resistance. I am attempting to find rules for reducing insulin but this remark you made just makes no sense to any diabetic. I want very much to add fiber rich foods, I have been keto for many years. Did I misunderstand that sentence? I played it back many times?
