Rice Noodle Rolls Water 2 Cups Rice Flour 6 Tbsp. Wheat Starch 3 Tbsp. Potato Starch 3 Tbsp. Oil a little Sauce Soy sauce 2 Tbsp. Sugar 2 Tbsp. Water 2 Tbsp.

It looks good, please use 2 trays, so while you're trying to remove the Cheung Fun out, put the other tray in to steam, after 3 mins, you can pour in the batter and let it steam and you have the time to remove the Cheung Fun out. But I prefer to line it with a piece of cloth, must easier !

If you go to an international or Asian market they should have them there. Be careful of the rice flour... There's different kinds. And I think they cook up different. Some markets have the starches already mixed together for these rice rolls

Excellent recipe. I followed all your methods and I dished it out just now & we had a hearty breakfast .Since we can’t get fresh ones like the ones from Singapore/Malaysia , I decided to make these fresh from scratch!! I made three variations. One with prawn filling and the others plain served w hoisin & chilli sauce Hong Kong style light soya sauce & then curry sauce available in M’sian stalls. All were yummy. For this recipe since the rice noodle rollls are delicate, i would follow his ingredients. 2 Cups of water 6 Tablespoon of rice flour 3 Tablespoon Wheat Starch 3 Tablespoon of Potato Starch

Yes. There are a lot of recipes for rice noodle rolls which use different combinations of rice flour, tapioca starch, wheat starch, corn flour. They all produce slightly different textures. In fact I have tried over 10 recipes before I found one I like. It is also important to use a good quality rice flour.

If you were going to fill these with shrimp or pork would you just add the meat during the rolling process?

Hi i asked Gambo and he said if you add the meat during the rolling process, The meat would have to be cooked separately. The other way is you can add baby shrimp or small pieces of pork on one side during the cooking process so that the meat would be cooked.

awkward method...That’s literally water from all the steam enclosed. I just use a non stick pan and let the heat do it’s job.
