Preparation of rich soup of pike perch.
For this dish, we need: 8 liter cauldron
fresh pike perch - 2-3 kg
onions - 5 medium heads
potatoes - 6 medium pieces
Carrot for broth - 1 pc
celery for broth - 4 stalks
dill
green onion
bay leaf - 3 pcs
pepper peas - 10 pcs
salt to taste
In order for the broth to turn out rich, you need to take fresh fish, do not clean the scales, remove the fillet. Boil the head, ridge and skin with carrots, onions and celery on a weak boil for 1 hour. Then we filter and in the received broth we cook onions cut into small cubes and potatoes also cut into small cubes until done, adding salt, pepper and bay leaf to them. Then add the perch fillet and cook for 5-10 minutes. at the end of cooking add greens.
