Join Rick Martinez in the Bon Appétit Test Kitchen as he makes apple cider doughnuts. These sugared doughnuts are craggy and crunchy on the outside, tender and moist on the inside. Apple butter (not sauce!) is key to their texture and flavor; look for it alongside jams and jellies in the supermarket, or at farmers’ markets, or make your own.

Okay, for everybody confused about the cider issue. In the US and parts of Canada we refer to unsweetened, unfiltered apple juice as "cider" and the fermented product as "hard cider" and the reason why is Prohibition. Cider was big business for apple farmers for most of American history, and when the sale and production of alcohol was prohibited between 1920 and 1933, apple farmers started selling more unfermented juice as "soft" or "sweet" cider, which was a big hit and eventually just became the normal version of "cider".

I've seen filtered apple juice labelled as 'cider', which it clearly is not. So you can't go by name. Until the prohibition Americans drank more hard cider than beer. Because of Prohibition the trees for the types of apple that make good hard cider were chopped down. Easier to grow a new crop of barley than wait for a tree to grow.

Gosh, I would love to be a cameraman in the BA kitchen. Just hanging out with these lovely people, filming them, chatting with them, occasionally encouraging them, and then getting to sample delicious food at the end.

Yea we say hard cider to mean the alcoholic version. Apple cider is unfiltered apple juice and "hard cider" is alcoholic

I love how those donuts turned out for you and everyone who tasted them must have loved and wanted more. While working for the state prison system here in Arkansas I got to taste some of the pastry the inmates cooked up in the kitchen at our unit and they was so delicious and I gained too much weight eating the cinnamon rolls and donuts while they was still warm.

Yeah if you just say "cider" - people will assume you mean natural, unfiltered apple juice. If you say "hard cider" - people will know you mean the alcoholic drink.

To me, Thanksgiving and Christmas are rather similar to each other in terms of food. Also, I think that Thanksgiving has more of a unique touch to it, like how turkey immediately comes to mind if Thanksgiving is mentioned. Christmas? Except for Christmas cakes, I have no idea.
