This Ricotta Cheesecake uses both ricotta cheese and cream cheese to produce a cheesecake that is creamy smooth yet wonderfully light and fluffy. The base is a graham cracker crust and I like to garnish the top of the cheesecake with fresh raspberries when they are in season.

Unfortunately what you are suggesting would only cut out a few seconds from the video and it would still be longer than most. Our intent is to provide content that is similar to a cooking class with all the detail. If you were to take a cooking class it would be much longer (and much more expensive!) We don't plan to change our style at this point.

Sorry we offer detailed videos so people can actually make it. If you are looking for entertainment there are many other options on KZbin that might be more to your liking.

This is very easy to make. We used 1 cup ricotta cheese and 2 - 8 ounce package of cream cheese. Only two hours in the refrigerator and my children was already requesting for a slice. We loved it and it's delicious.

Fantastic recipe, with a detailed, clear and concise presentation of the how and why! Your presentations/video are perfect Stephanie! Don't change a thing! I did tweak it a bit the 2nd time I made it as I grew up eating Italian ricotta pie that included a bit of cinnamon (1/2 tsp), 1 TBSP orange blossom water and candied orange peel. For those concerned about the pie cracking, try turning off the oven, leaving the pie inside for an additional 30 minutes (with the door ajar) before removing. Also, running a knife around the edge of the pie after a few minutes of cooling at room temp will help to minimize the deflation factor. And one thing I learned over the years, always add the eggs one at a time and beat at lowest speed, just to incorporate. As Stephanie has said, adding to much air to the batter while mixing makes your pie more susceptible to cracking and falling while baking. And always make sure your pie is completely cooled before refrigeration. Chilling a still warm pie in the frig will trap condensation and make for a soggy/wet pie!

I love the detail in these videos and that the measurements are in grams as well as cups. In the UK our standard measures are either grams or ounces so this is great. Thanks!

We use both because grams are used everywhere except the US and we cater to a world wide audience.

Thank you so much, Stephanie. I stumbled onto this recipe a year or so ago and had fantastic success from the very first attempt. Now, every time there is a family gathering. I get a request to make this cheesecake. :)

I made this yesterday and we all ate it today - the only 2 differences were that I added a full container of ricotta which held 475 g as opposed to your your recipe which contains 450 g and the zest of both a lemon and an orange - it was fantastic - light and airy and not as dense as a regular cheesecake - this one is a keeper - thank you.

Cracking can be caused by over mixing the batter or over baking the cheesecake. Cracking doesn't affect the taste or texture, though. You can always spread a fruit sauce, lemon curd, whipped cream, or a chocolate ganache on the top of the cake to cover the cracks.

I’ve watched many Ricotta cheese cake recipes. I really like your mixing the two cheeses and the graham cracker crust. Thank you! Oh, btw, I make my own ricotta. The only way to go. So easy too.

Stephanie, unlike other comments I've seen I actually really enjoy the length of your videos. I'm newer to baking and I really do need these extra tips to ensure the recipes come out as they are supposed to. I tried to find dinner videos like this online as well, however I have not been able to find anything decent.
