I roast eggplant and peppers. Then blend with ginger, tumeric and onion. ... That's my sauce recipe. ... Sometimes I make it in to Indian and sometimes Thai.

Instead of using a disposable plastic bag, put the roasted peppers back into their bowl, then cover them with a plate. And don’t waste the purée in the blender: rinse it out with your stock.

Maybe put the roasted peppers in a large cloth bag. Heat & plastic are a very bad and unhealthy combo. I wonder if they'll steam good enough, though, to hand-peel off the char. The bowl & plate might be the ticket. And yes, of course must gently add water to blender and swish good before giving a good rinse for the dishwasher. Excellent points, Dorothy. Yes. Carrots. They lend a sweetness to your sauce. Celery does it too with the added bonus of natural salt. You can use the pasta water too to thin the sauce and it will give it more body...viscosity. I love your videos! And I agree with others that a hot taste test is the perfect ending. 😂

Thank-you for this recipe Dillon. It was good, but I wanted more of a tomato taste. So I added umeboshi paste (miso could work instead) and red wine vinegar. Yum! I typed Dillon's recipe as modified by me here. I didn't measure anything like Dillon so use the amounts you want. Dillon’s Red Pepper Marinera Sauce (modified by me) 1 Large Carrot 12 Roasted Red Bell Peppers 1. Puree in vitamix. 6 Cloves garlic or more 1 onion chopped or minced 2. Sautee onion and garlic in water or broth. 3. Combine vitamix ingredients and sautee mix in pot. 4. Add the following: 1 lb raw cauliflower cut into little florets (Dillon's recipe uses mushrooms and is sautéed with the onions and garlic) 2 Large bay leaf 3 - 5 tbsp Italian seasoning 1 tbsp of umeboshii paste ½-1 cup red wine vinegar 4 tomatillos chopped Handful Fresh basil chopped Add water or broth to desired consistency. 5. Simmer for 10 - 30 minutes

It's great that you didn't use oil for the spaghetti. Actually, oil floats on the surface and in Italy we don't use it in the water when cooking noodles.

Sandra Carli That’s right, you’re not supposed to use oil. I used to when I first started cooking then found out there’s no need and also not to rinse pasta after cooking. Also, you’re supposed to drain pasta and stir it through the sauce on the cooktop, not the other way around. You’d know that too, being Italian. :)

@@sugarplumk2381 The sauce can be stirred in the pot with the noodles or not, it depends on the region one comes from ;) In my view it also depends on some dishes. Sometimes it's difficult to mix the noodles with the sauce if the dish is small and elegant. For some dishes the noodles must be added to the sauce before they are al dente so that they can absorb more aroma. A typical case is 'spaghetti alle vongole' with little clams (see link below at 4:30). I use the same recipe but I've replaced the clams with mushrooms. It’s a great idea to use red peppers (capsicum) as an alternative to tomatoes. Getting those mushrooms in there makes it extra nutritious. Good one Dillon.

Most recipes I find in cookbooks for enchilada sauce are tomato-based. But if you look at the cans of enchilada sauce in the market the ingredient list does not have tomatoes it has chili peppers. It would have to be very mild chili peppers for me but I bet you could come up with a good recipe for that.

I eat raw mushrooms once in a while, I cannot imagine it is going to be all that problematic. Also, I have heard you barely need to apply heat to remove whatever mild toxin I have heard others refer to in raw mushrooms.

Delicious! But iit would take me 2 hours to eat your appetizer portion! I eat slow and get full quickly, wspecially on spaghetti. I don't know why, it's almost like it gets stuck. Other pastas are like that, too, but not nearly as bad as spaghetti!
