RECIPE (5 servings, 1h prep time): -about 1kg tomatoes, roughly chopped -optional: 1 red pepper -1 onion -1 head of garlic Add olive oil and salt. Roast at 200C/400F for 40-50mins. Add everything to a blender (not the skin of the garlic, and peel off the skins that are too dark) Blend until smooth and pour in a pot. -1 cup (250ml) water -salt and pepper to taste -fresh basil or dried Italian herbs -1/2 cup (125ml) vegan cream Let it simmer for a few minutes and serve with chili oil, bread and whatever you like.

You know kitchen staff wear mostly white right ? Plain white coton can be washed at really high temperature, cleaning it is easy. It also show cleanliness obviously.

Tipp: roughly chop some walnuts, roast them in a pan an use them to garnish. Also - truffle oil. Its more affordable than most people think. Together it gives a little bitterness and aroma that goes just so well with the creamy tomato soup.

I just made this and next time, I would use 2 red peppers, 2 heads of garlic and about half the cream (I used regular dairy cream). It also tastes good with a square of butter on top, black pepper and/or parmesan.

@@RnRnRa lot of cheeses actually aren't vegetarian, because the acid that is added to make the whey separate is often from cows' stomachs. Not every vegetarian knows this or avoids cheese because of it but if you are a strict vegetarian there are a lot of cheeses you can't eat, and parmesan is one of them.

My experience: I made this with three huge tomatoes, two red bell peppers, one yellow onion, and two heads of garlic. I roasted them for about 30 minutes at 400 (it probably should have been more like 50, but I was pressed for time), then blended everything together. I had to strain the mixture through a fine mesh sieve because my blender wasn't powerful enough to also blend up the tomato seeds and skin bits, and that took about a solid six minutes or just stirring it around in the sieve so all the liquid would get through. I simmered it with some veggie stock (maybe 3/4 of a cup or less, I didn't measure) and maybe 1/2 cup of cream (or more), but I think that amount was too much and canceled out some of the roasted flavors. I added a dash of cayenne, a lot of salt and pepper, some Italian seasoning (but probably not enough to actually matter flavor-wise), and the secret ingredient: four dashes of fish sauce, which added some depth and umami to everything (fish sauce is the secret to a good chili, too -- I'm sorry, veggies and vegans out there). It turned out exceptionally well (not five servings, but maybe three 2-cup servings), and I would definitely make it again with a few adjustments: more tomatoes, less cream (if any at all), more cayenne and some other spices (paprika?) -- and I think floating a basil sprig in it while it simmered and removing it at the end would be really tasty, too.

I used to make red sauce in big batch then canned it. It's just tomatoes, onion, garlic, and basil.... maybe a table spoon of butter. I used it as ready-to-use pasta sauce and tomato soup. Delicious ❤ Plus, I live in the tropics. There's a lot of soups and stews we eat year round. So we don't have 'soup season' 😄

Soup like this, tomato based goodness, is all seasons - though I'm more likely to add extra pepers in the summertime or sweet potato/squash in the winter. Big thick meaty stews are wintery vibes, though. And you need to live somewhere really warm to eat gespatcho in anytime other than mid summer.

That's a good roasting, I do that with my fresh tomatoes after I pick them every summer. Then, put in a container and freeze. That way I have the rest taste all winter when you can't get tomatoes. I usually have around 6 plants every summer, and also do 6 yellow tomatoe plants. The yellow ones aren't as acidic as the red ones. 👍

Such a versatile recipe. I sprinkle the veg with a tablespoon of soft brown sugar before roasting, for extra caramelisation, add veg stock for extra flavour and Tabasco to taste at the end - yummy! You can even make it with canned plum tomatoes - drain them in a sieve, split to remove the seeds and retain the liquid to add back later. My mum used to add 1/2 cup of rice for a more substantial meal 😋
