Salada d' Idalina, an original recipe by Chef Rego from Goa

Made with pure love and named after my beautiful and loving wife Idalina. This is a simple, fresh and healthy salad recipe i created back in the day to create a unique salad that has texture and taste that balances perfectly well. In todays world of healthy eating, this is a must try. I have made it with love, i think you should too.
Ingredients
Green moong sprouts - 150 grams
Pineapple chopped - 50 grams
Baby corn chopped - 25 grams
Spring onions chopped - 3 nos
Capsicum chopped - 1 no
Tomato chopped - 1 no
Green chilly finely chopped - 2 nos
Grated fresh coconut - 3 Table spoons
Lemon juice - 2 nos
Salt to taste
Olive oil to toss
Fresh coriander leaves - 2 table spoons
