Yomilosofandum why? Do understand the overpopulation process. Since most people have children in their 20-40s (later than ever before), their children grow up to that age ratio by the time their parents are dead. Notice how more people are having less children already so... Yeah. Overpopulation is usually because of third world and developing countries having 5× the average children per family unit in Western countries (2.4). Having children is NOT a bad thing. No one is asking you to have like 28 million kids, okay?! 😉

I made the chickpea brine one and my mind has been blown. I used agar because I can't get kappa, so it was more of a brie texture, but it great. I think I'll use less coconut oil next time and a bit more tapioca. The aquafaba totally make the cheese taste like cheese.

I have Miyoko's The Homemade Vegan Kitchen cookbook and her mozzarella recipes are totally different than any of these. Most of the cheeses in that book are made with rejuvalac then fermented. I have been wanting to try aquafaba cheese. Your videos always inspire me to get in the kitchen!

Not yet. I just got my package with the rest of the ingredients I needed. Knowing the funk that comes with drinking rejuvelac my assumption is it will add good cheese llike flavor. Especially because you ferment it for 1-2 days as well.

Try miyoko's meltable recipe with homemade soy yogurt, it can be made more sour than store bought coconut yogurt; you can also culture cheese longer for similar effect, though the yogurt source impacts taste a lot. Serves about same purpose as lactic acid probably does... not that I'm against the lactic acid, but I imagine your yogurt choice changed the taste a good bit. I ferment soy milk with chili peppers (or the stems) as they are inhabited by lactobacili; this requires less regulation of temperature than commercial starter, I suspect these bacteria lean toward being mesophilic rather than thermophilic.

I got so excited when I watched this a week or two ago that I chose the last recipe (aquafaba and kappa) and went store to store and online for all the stuff and last night I finally made some. I was soooo disappointed but it's because something went wrong. I followed the link you added and used their measurements but during the heatin process, things were a lot less creamy and a lot more oily and clumpy. Idk what I did wrong, maybe too much thickening? Idk, I followed the instructions perfectly. ):

I looked at the oil & yoghurt mozzarella recipe and it says to add rejuvelac to the recipe, but Miyoko doesn't use it in her video. Could that be why it was so mild? I bet with the rejuvelac it would be good.

Nope! So, in the tutorial for that recipe she just uses water rather than rejuvelac, which is what I did too.

V Noble I have made Mioko's mozzarella cheese and purchased from her on line. Rejuvelac is not needed since it is cultured with yogurt. Unfortunately, I was very disappointed in both. I threw both of them out after tasting. I thought I had done somthing wrong when I made it, but they both had a texture that made it fall apart like it was dissolving. I thought I had screwed up the recipe, so I blamed myself. After I puchased on line only to have the same results, I just decided maybe my expectations just were too much. You should try both, maybe it will be different for you. To tell the truth, I have made the cashew cheddar twice and decided that it was ok. I still have some culturing in the fridge for the last nine months. Its really more of a cheese spread. Its ok, but again, for me, the process is way to much for the yields. I really liked dairy cheese when I ate it, so I have expectations that are not met with the vegan cheese. However I really do like that Follow Your Heart smoked cheese.

Sarah's Vegan Kitchen check out a channel called Connie's Rawsome kitchen, she has an entire playlist of vegan cheeses that might beat all three, they seem to age, slice, grate and firm up nice too.

I've seen some of her other recipes! She makes some cool stuff; I'll look at her cheeses.
