I'm in the middle of making these right now (waiting for partner to get back from the store with the tomato paste we forgot, haha) and it smells like pepperoni in my house. I clicked on a link in their recipe (think it may have been posted in a KZbin description) and it lead me to their Amazon page which had their recipe names posted. Once I clicked on a recipe, it lead me to all the associated tools and ingredients! So cool!!! 🤩

I actually learned this technique about 15 years ago, watching an anime called yakitate japan. It's about baking, and a character needs a reinforced gluten dough, but there is only like pastry flour and a weak bread flour. So he basically extracts 3 doughs worth of gluten from the same technique (kneading under water etc) What a nostalgiatrip I just got.

Many years ago, I made pepperoni from wheat gluten and instead of water, I used the the juice from a jar of pepperonicini peppers. The texture wasn't perfect, but it tasted extremely close to pepperoni. It was much better than any store bought vegetarian pepperoni I have ever had.

I think this style works really well! The ending doesn't feel rushed anymore. Starting with a bit of the taste test, then ending with the whole test gives a feel of completeness. Great job on the pepperoni, too!

I made this with my starch from making washed flour seitan, and it’s just as amazing as you described! I ended up grinding some soy curls up on my food processor to about cornmeal consistency & adding that for more texture than the gelatinous starch, and recommend giving that a try! It was maybe 2 Tbsp of the ground soy curls. Either way, this is mind blowing! Pizza is in the oven right now!

I just made this! not hard at all, used the agar, got the idea from your recent video about seitan, had a ton of wheat starch after getting all the gluten out while trying out the pan fried seitan (So great btw!). Pepperoni is usually little round pieces but if we cut little triangles out of one big pepperoni, we would use all of the big pepperoni and it would make an interesting looking pizza.

I learn a lot from your videos! I don't have quite a few of the same ingredients, but I have my own versions of most of the dishes "that can use a little tweaking". I combine aspects of your techniques with my recipes to get an enhanced dish, works pretty well! Have you tried the Chao shreds? I mix them with the Daiya mozzarella shreds and the Follow Your Heart shredded parm to make a killer triple cheese pizza. Sometimes, I stuff the crust with Daiya cheddar shreds & strips of the Daiya cheddar slices. I can hardly wait to try this pepperoni recipe! Thank you!

The store bought cheddar taste test was great. Most others test it with vegan tastebuds, if you know what I mean. However, I really, really, need a store bought mozzarella taste test (especially for stretch for pizza). Also, which video do you have the skillshare link, I want to do a course, but don't remember which video you had the link for it on. Lastly, you said to put our ideas for what tastes like cheese. I was vegan, but I started eating pasture raised eggs, because anyone who's ever had a pet chicken and is vegan will tell you they have to throw eggs in the garbage every day, because a happy chicken will lay them with no rooster daily so they're healthy and the chickens really don't care if you take them with pasture raised chickens. That said, the yolk I often scramble by itself and while the food is warm drizzle it and it tastes without doing anything pretty cheesy and at the right low temperature it gels instead of turning bright yellow where it stops tasting cheesy. Also the white of the egg can be blended until it reaches peaks and create natural, non-artificial textures that with the right ingenious I'm sure could mix with vegan products to make the most realistic vegan cheeses ever. Honestly, if it looks the same, you could differentiate it from the original by making it in different shapes. For example, cutting it in squares or rectangles or hexagons, instead of circles, could help differentiate it a bit. Plus that the corners could get a bit more toasty (or burnt).

I was helping my Indian mother in law making homemade chips using this method of steaming the starch in little disks using plastic lids from peanut butter containers and drying them out in the sun until hard and transparent. When you deep fry them they puff up and get super crispy kinda like prawn crackers. I bet putting that seasoning blend in those would be super tasty! 😋

For me the best part of pepperoni was the oil pockets, so I started just making “pepperoni oil” by infusing a flavourless oil with the spices mentioned here, leaving it for a few days before filtering out the solids. Drizzle on the pizza for the pepperoni flavour. Will have to try making this at some point to bring back the texture as well. Excited.
