Tortilla presses are awesome. They take a little getting used to, though. They are set for certain even thicknesses for flour dough, so if you make them much thicker, you get a slight unevenness. You can rotate the tortilla 180 degrees and press it a little again to even it out, though. Also, the tortilla tends to "shift" a little off-center away from the hinge, so I usually place the dough ball like a half-inch closer to the hinge.

Indeed .. some pork tortilla chips might be nice. That used to be my Sunday football thing. Huge bag of Tortilla Chips and homemade salsa/pico. I don't miss it .. much :) At least I don't still do it (-85 lbs and mostly Carnivore .. I guess more ketovore as i do still use stevia and from time to time have avocado or berries).

I've heard ground pork rinds called pork dust, but I like pig flour better! They look interesting and I appreciate all the effort you put in, but I'm not sure it's worth the work to me. However, if you want to send me some samples I'll let you know how well they stand up to shipping! :)

Good morning Steve! I’ve been reviewing this video multiple times. I can’t find paneer cheese here. You have mentioned low moisture low flavor cheese. Do you think low moisture mozzarella would work? It's my new favorite tortilla. I've found that adding any extract (cornbread, corn tortilla, or acetyl pyrazine) seems to enhance the aroma more than the flavor. When I'm making the chips in my dehydrator, my house smells like a Frito factory.

Just a thought... I bought two small silicone mats at Marshall’s and just cut them into rounds to fit my tortilla press instead of using the parchment paper. They work fine without having to spray with oil. I find it easier for me to flip them on my griddle and then pull off the mat. I didn’t have your quick flipping method down. It worked using your other tortilla recipe. Can’t wait to try the carnivore ones. All great recipes have to have that certain touch. I appreciate your dedication on trying to get it just right. I once almost drove myself crazy trying to tweak a cracker recipe. Thanks again for all of your videos 👍🏻

It may take a batch or two to get the timing down. But then you'll get into a rhythm and can bang these out pretty quickly and easily. The trickiest part is determining how long to let your dough rest (based on the moisture of your cheese).

Recently found out I had diabetes. I had been on Atkins years ago, but now I'm going to go on keto and hopefully not go on medication. I check my blood sugar 4 times a day. Anyway I love your videos, keep it going! On a side note if you opened up a restaurant I would certainly attend! 😁

You'll not regret the decision to go keto. I've been on it for 5 months and it's done wonders for me both in weight and in my test results. It's hard to believe so many doctors are still in the business of treating symptoms (blood sugar, high blood pressure, etc.) with more and more drugs instead of this simple alternative that actually addresses the underlying cause.

Was this really 3 years ago??? Ok so since I saw these when you originally posted I said, "I will try to make these"... well 3 years have passed and I have finally made them. I used queso fresco to give a larger window to cook. I used 40 drops of corn bread flavoring instead of 20... still feel like it needed a bit more. I used my ninja nonstick instead of a cast iron. The tortilla press, I removed one side of the parchment paper then put the tortilla side down in yhe pan and did not remove the other side of the parchment until a minute later. When the tortilla is cooked, it's easy to remove the other side of the parchment. All in all, tastes good and was WAY easier than I thought. Thanks so much Steve.

Wow, Steve, you are on a ROLL!!! I made these today and killed it! Went through an entire block of Costco paneer, which was EXACTLY the right amount to go with an entire 8.5 oz. bag of pork rinds from Walmart! Total of 20 tortillas, baked some into chips for Super Bowl (don't have a dehydrator) at 200 deg. convection, and I've never even made tortillas before in my life! In the future I might make them a little thinner *if* they are destined to be chips. I used a non-stick electric griddle and it worked great. Mine happens to have two sides with separate temp control, so that was helpful, but not essential. The cooking turned out to be much more forgiving than I expected. Stuck to single batches as you recommended and it worked great...had time to make batter during cooking and while dough was resting, with very little wasted griddle time. After making your carnivore pancakes (twice, now!) and loving those, I was pretty confident these would also be good. Home run!

Intriguing, but I have trouble getting past the smell of the pork rinds! I use your paneer recipe with queso fresco because I can’t find the paneer at our Costco. The water content is something I struggle with every time, also tearing. I’ll try oiling my parchment next time to see if that helps. Thanks for all your efforts.
