I was "plump" when I was younger. As I was able to break away from my parents' diet as an adult, I started keto and I suddenly had abs, cheekbones, and my face (as opposed to my body) became the focus of my appearance. People were suddenly telling me how beautiful I was. I was always pretty in the face but no one noticed because I was chubby. I love seeing the same people who teased me just to see the shock on their faces. Isn't it so gratifying to get compliments from people who haven't seen you in forever?

I call it PLANNED Treat Day. I think the secret is, it's planned, not going off accidentally or due to temptations, or peer pressure. Planned, enjoyed guilt free and right back on tract.

That’s exactly what I do. What’s important for me is not letting the situation spontaneously dictate whether I’m going to indulge or not. If it’s deliberate and planned then I won’t fall off the wagon and go crazy on the horrible snacks on the tables at work.

I want some how to remove from my mind that eating destructive, toxic substances constitutes 'a treat'. Where did such erroneous thinking come from? Our deep brain washed addictions? Why don't I believe that gobbling down a freshly steamed plate of organic veggies is a 'treat'!?!? :-( Off my confused soapbox now. Sorry to bring my mental struggles into the light ;-)

@@PinkLady54 I understand what you are saying. I'm 74 years old and for 73 of those years I believe a "treat" was SUGAR something. Candy, ice cream, cookie, pie, cake, etc. But since going Keto a "treat" has now become something reasonably healthy that I would not normally eat. A small slice of pumpkin pie, a spoonful of stuffing, a REASONABLE portion of mashed potatoes and a tiny bit of gravy. Those are now treats to me. It took a long time to realize they are special treats and I had to relearn that those sugary things I used to have are not treats, they are poison. Everyone has their own struggles, I always say, try to do better today than you did yesterday.

By planning ahead for an extremely rare non-keto meal, you can also prep with lots of allulose and a couple grams of chromium picolinate to offset the glucose/fructose and insulin peaks! There was one more thing Thomas DeLaurer just covered this week after Thanksgiving 2021, but I can't for the life of me remember it! LOL!

While I don't miss waking up feeling like complete and total crap, I really miss those "foods" going down my gullet. I do keto diet life. I have chronic pain, hypothyroidism and Lupus. Keto helps with pain etc. I was so glad to come across this video. Is interesting to hear different reasons why people go on keto. I feel sick when I don’t eat keto.

Way to go on the Smoked Turkey. We had smoked turkey breast too. My wife declared herself Keto! My daughter and her boyfriend were over from Portland and hadn't seen us in almost a year. They were amazed at how well we were doing in the weight department. Unknown to me, my wife has been really cutting out the carbs. So, we stayed Keto for Thanksgiving. We had an awesome Keto Bread Stuffing, Brussel Sprouts, Costco Cauliflower Mashed Potatoes, and a Keto friendly mixed berry, no sugar added pie for desert! When I go "off plan", I call it a Feast Day! When it comes to Keto flours, Steve you have shared so many options. I have found mixing the various flours to be amazingly fun and adds variety. I made a pizza crust and instead of using all almond flour, I substituted half the almond flour with sesame flour and it made for a lighter flavored crust. There are many great keto friendly flours out there, that can add variety to taste as well as nutrition. For example, in your pancake mix, I have switched out some pecan flour for a different pancake. I have also used hazelnut for a different flavor pancake. I do think we can have fun. A little creativity goes a long way to make this diet fun and interesting.

I always tell people, keto or not, eggs are always a cheap option for great protein. Especially when starting keto, it can be expensive, but it doesn't have to be. I tell people not to worry about trying to ketofy things or make all the sweet treats and just to go with whole foods and lots of eggs.

Stuart?! I say “off-plan” too. I spend less eating keto than I did eat SAD. I get full faster and stay satiated longer on keto since I’m not buying junk that we go through too quickly. Chips, cereal, and other snacks are not cheap and just make you eat more. Great news about Connor. Glad you’ll have him home around the holidays.

I would recommend you give it one more shot. The King Arthur Website discusses over-kneading, making the bread or rolls hard. I tweaked their recipe; I used active dry yeast instead of instant (I did this on purpose, the only way to tell if your yeast is alive), and a tablespoon of honey to feed the yeast and get it nice and foamy (the yeast will eat the honey). I followed the bread recipe, put my breadmaker on the dough cycle, and kneaded the dough for only 5 minutes. Then, I shaped and transferred the dough into a sprayed loaf pan, allowing it to rise. It baked up a nice and soft, beautiful texture. I tented the top of the loaf with foil for the last eight minutes of baking to prevent over-browning. Please give it a second go and review it.

We call it a splurge day, and we keep it to no more than 1 a month, and usually longer in between than that. I want to thank you soooooo much for the gravy recipe. I did the browned butter with both from last years full Turkey, made from the drippings and the carcass boiled down with the giblets, sage, rosemary and thyme, bagged and frozen. BEST GRAVY - EVER!! Yes I did eat a couple of spoon fulls testing it. We've been keto for 3.5 years now.

I did make your flax crackers on Thanksgiving. 👍 Being a brewery I have tested my blood work after drinking different beers. So I now know what beer I can "go off plan" occasionally and have and still stay in ketosis. I have several keto friendly beer recipes I will be brewing soon. Stouts are the hardest to brew as keto friendly.

Last year our Thanksgiving meal was totally a Keto. At Christmas I had our “normal” Christmas fare. I enjoyed both immensely, especially the Christmas meal (and snacks). I gained 5 pounds!!! And it took me 3 weeks to get it off!!!!! This year I made a little of both, but only tasted the regular food while cooking it to make sure it tasted ok. My blood sugar was great all day and I felt happy that there was no gained weight. And everyone enjoyed all the food!!!!! So happy to hear of Connor’s graduation!! Enjoy your time with him and make lots of new memories together!!!

Peter Ballerstadt is another good person on the subject of regenerative agriculture (you can search KZbin). Saw him live at Low Carb Houston last year. It's great to get some perspective on arability (or lack thereof) of most agricultural land and how the entire food system cannot function without ruminants. It's WAY more complex than people want to believe. People don't realize that being able to stop taking meds reduces your carbon footprint--pharma is a HUGE culprit.

Really like the different subjects that you bring to us. It broadens our way of seeing things. The minion in the back ground helps too. Beedo About your insomnia or wake/sleep cycle, I was doing that and was told by my doc that I am caffeine sensitive and to limit it to no caffeine after lunch. If I start the waking up I have to go through all my food and drinks for that day. It’s weird some of the foods that have caffeine in them. Good luck in finding your problem. Thank you for always bringing us great info, tips and tricks. 😊

I'm so glad Connor got to come home. Last year my son was still stationed in Korea through Thanksgiving and Christmas. This year I got to see him and his wife for Thanksgiving and her parents will get them for Christmas. With a son or daughter in the service you will find you become grateful for the holidays you do get to see them, but you never count on it. I remember being "Corn Dog'" poor, but my go to was a 50 cent 1/2 gallon of ice milk from Winn Dixie. I ate it for dinner every night for almost a year until I got a second job at a kosher restaurant. LOL, good times.

Hey Steve. I too find myself waking up quite a bit in the wee hours of the night/morning and in the past I would have anxiety about that. However, after following a couple who are Evolutionary Biologist for a while, they spoke of waking in the night as normal. They surmise that our ancestors would wake during the night for safety reasons, to tend to the fire, and actually converse with one another. Now, when my wife ask's me how I have slept when we wake in the morning, my answer (sometimes:) is..........like our ancestors. Oh, and by the way, I get an abundance of great info. from your channel. Keep it up. Happy Holidays.

I call it a Carbie Day and I do it once a month. The last Saturday of each month I treat my wife and children to a nice take away (and sweets). I know this might sound a bit pathetic but we are very conscious about child obesity and bad habits, so we are very strict on eating healthily and daily exercising. Considering the pandemic we're living right now I believe this is good for the local economy and also for our mental health too, just a nice treat to look forward. I've been doing this Keto diet for nearly 2 years now and I don't have any plan to stop it (sleeping disorder solved here) but I do need and enjoy my Carbie days. I am very good the other days of the month and I do exercise daily so I know I'm back in ketosis practically the very next day.

Very informative and well presented. I have been making a Keto bread successfully for the past few weeks using a recipe that calls for ground Flaxseed, oat fibre, essential wheat gluten Zanthum gum etc. I am not gluten sensitive. I use a bread machine to make the dough, form my loaves or rolls, proof them in my oven with light on and a pan of boiling water underneath the product. When loaves etc are risen I simply switch on my oven to 350 degrees leaving all product in the oven as it heats and bake till done. No need to replace hot water. I found this on line ,thanks to Deidre. I have been making bread for over 50 years and it was not Keto but always enjoyed. So it was a missed dietary item when I commenced Keto 3 years ago. I follow Keto to maintain my weight and health. I seldom feel hungry and never deprived. I am glad things are going well for you and your family.

I’ll give you a head start on the brûlée. Allulose looks like it melts and caramelizes, but it actually turns into a gummy, barely chewy mass. Lakanto works pretty well.

I say eating off plan. I was able to stay on plan this Thanksgiving. Using your keto stuffing recipe, and mashed cauliflower. Thanks! My day after blood sugar was 78, my ketones 1.8, GKI 2.4. Saturday, I planned to eat off plan for my daughter's birthday brunch. Which included a shredded potato, sausage, egg and cheese casserole. I ate on plan the remainder of the day. Sunday's numbers were BS of 83, Ketones 1.2, 3.8 GKI. Not a huge hit, but the potato ackey joints have kicked in. Most successful holiday for me to date.

I love the king Arthur keto flour. It's not that expensive where I live and I find that using a third less than what is called for in my recipes works just right. I made chocolate chip cookies with the choczero chips and the keto flour and my husband and I just love them. The texture is so much smoother than the nut flours. I'm sorry you didn't like it. It's a hit in my kitchen.

I utterly adore your transparency. “Cheat Meal” for me is “What The F*ck Am I Thinking?” I have always spoken negatively to myself when I know I want something that is “off plan”. It helps the carb addict in me not feel as if she’s won something over the “new” me. I’m an emotional eater and have convinced myself, time after time, “I’m worth it” as a “reward” or simply because I don’t want to cook and clean tonight. I always...always....ALWAYS regret indulging myself. My biggest addiction was American Chinese food. Now that Keto has allowed my palate to “awaken” and become more sensitive to salt, sweet, and fat, I can now detect the age of a carb product, from fried rice to noodles. It was horrible. I’ve been Keto since June 2016, with many (too many) “stumbles” along the way. That’s a long story in itself but suffice it to say that I follow Keto to keep my blood glucose levels as low as possible. Inflammation is readily apparent in my joints and muscles when I eat “off plan”. I’ve learned that instead of “Cheat Meal” or “Cheat Day” to “WTF Am I Thinking” is a direct correlative to “Pain Is A Great Deterrent”. ‘Love your little Minion sidekick over your left shoulder. I, too, chose to stay Keto but I did make items with CarbQuik (“Keto Dressing”). In relation to your conversation with a former coworker who’d been honest and said that he believed you wouldn’t live much longer when you were at your heaviest, I keep photos of myself at my heaviest (370 lbs when I was told I had T2 Diabetes with an A1c of 9.1). I found Keto from a 2015 TEDTalk by Dr. Sarah Hallberg, who went on to co-found Virta Health with Dr. Steve Phinney (and others). I know what you’re talking about with the “sudden on-set insomnia”. For me, Nu Leaf Naturals CBD oil (based out of Colorado) ten drops sublingually just before bed has helped me immensely to quickly fall asleep and dream in VIVID color. In addition, it’s an excellent topical analgesic and definitely speeds skin health/healing. I used it for scarring and wound healing post-surgery for everything from my 2017 DMX to my 2019 Latissimus Dorsi reconstruction. My scars are beautiful, light and translucent. In relation to your trying to caramelize alternative sweeteners, “Debbie’s Back Porch” can give you a bit of information as she attempted to brûlée several, from Splenda to Lakanto monkfruit. I’ve used daikon radish two ways that were wonderful made as “fondant” (seared, then roasted in stock) and my preferred method: pressure-cooked with cream and butter before running the soft tuber through a food mill to remove the fibers. I cooked as well for the family for Thanksgiving. I keto-fied the sweet potato casserole - I know sweet potatoes aren't keto but of all the side dishes it was the one I wanted. So the topping was made with Swerve brown sugar, almond flour, and pecans. No one knew. I just passed on the other T-Day favorites. I also made the gravy Keto-friendly, and my bacon-wrapped asparagus was a hit with all. I've been eating leftovers since last Thursday and the numbers are good. Today the last of the turkey is in the crockpot with the stock I made last Friday from the turkey carcass with Daikon radish, celery, carrots, onion, and green beans. Going to make your corn muffins to go with it. Could you please review Carb-nada noodles and Palmini pasta?

Deviation! I don’t cheat (negative and sabotaging). I deviated. Sometimes it’s planned so I lead up to it by being super clean and struck, or sometimes it’s unplanned and out of my control so I follow up by being super clean and strict in the days following. Because my metabolic flexibility is getting better all the time the time required of being super strict is getting shorter all the time😀

I use chaffles for hot dog buns. By adding a little heavy cream to the mix the final product really softens up, and wraps around a hotdog nicely (obviously not the same experience as a real bun).

Ever try the wonder bread ‘chaffles’? To me they are way closer to soft white bread than a regular chaffle. I use egg whites and be sure to use the very fine almond flour as the coarser on makes them more like cornbread texture. Best to Google the recipe. Wonderbread Chaffle (2 dash) 1 egg 1T Mayo 1T almond flour maybe 1/8 t baking powder 1t water

Thank you for the video with the mini reviews and happy to hear about your son. I use cheat day/meal though not rigid about other references. I use it because it’s easier to explain to people. I tried off-plan with some people then had to explain that I was not on a different plan etc. Then I said I’m having a cheat meal and conversation was over because they understood or thought they did but either way I was able to be done trying to explain myself. Whatever works for someone. Thx for your time and work for us.

The flour has most of the starch removed, so the yeast doesn't have anything to feed on and leaven. You can add sugar as a source for the yeast feed on and the sugar will be consumed leaving 0 net carbs if you allow it to proof long enough.

Thanks for the "heads up" on King Arthur KETO Flour. I already have 2 pouches... will let you know how they bake up. Meanwhile I finally started baking Diedre's Bread in my Cuisinart Breadmaker cbk-200 and both loaves had an overly dark, burnt, crust using the Low Carb menu option. Which setting do you use? Do you think it could be the Allulose? Which I sub for Swerve. Otherwise the texture and flavor are terrific!

I haven’t used allulose in baking bread yet. For my bread maker, I just use the standard or basic setting.

One of my greatest challenges this past year has been making the shift from thinking of keto as a diet (with an implied ending when I reach my goal) to realizing it needs to be a lifestyle, which I wll need to maintain indefinitely. There really IS no going back to the SAD for me but part of the shift is also accepting that I can and will consciously and carefully go "off plan" under limited circumstances. Trusting myself to do that and not slide completely down the slippery slope has been hard.

We call it living, we don't treat Keto as a diet but a lifestyle. We just make the healthiest choices available if we are out or it's some holiday or special occasion dinner.

Keto is expensive if you start buying all those marketing keto products and substitutes. If you buy fresh or frozen simple products on the supermarket and cook, keto is simple and afordable

Another great video! Thank you for talking me down off the ledge with the KA flour! I have struggled with varying degrees of insomnia for much of my adult life. This year I had finally had enough and went down the rabbit hole trying to improve my sleep. The first thing that I did was to transition from a whole food plant-based diet to a low carb/sometimes keto way of life. This helped a lot in the beginning, but still, something was missing. More research ensued until I stumbled upon earthing or grounding to not only improve sleep but my health overall by reducing inflammation even more. It seemed to be the missing link for me :) If you are interested, this book is a great place to start. Earthing: The Most Important Health Discovery Ever? Insomnia - Just for the heck of it, try 2 tylenol and 2 advil before bed. I've had sporadic insomnia issues, and in many cases I sleep through the night, or if I do wake up I'm out again within minutes. I'm sure it's not good long-term, but it would interesting to try. I normally take that combo before going to the dentist, as I have hyper-sensitive tooth nerves I guess. My dentist several years ago recommended that combo.

Had wonderful thanksgiving lunch with cousins here in Australia as they had lived for many years in the USA and I gave myself permission to go “off script” with rhubarb strawberry pie for dessert ! I just did OMAD next day and all good ! Also I find that even thought I eat very high quality food on keto my grocery bill is actually smaller as I only eat twice a day and far less than I used to and no take away food - if my adult children want non keto foods they buy it for them selves. 14 months in and I couldn’t be happier ! And yes - people who haven’t seen me for months due to hard lockdown we here had to look twice 😂😂

I watched "Sacred Cow" and really enjoyed it. I like films that are based on real science. My mother and father grew up on farm/ranches in the midwest that employed mixed agriculture until the dust bowl and Great Depression wiped them out.

Went off plan by having a very small amount of mashed potatoes (1/4 Cup with 1Tbsp of gravy) and some sweet potatoes with brown sugar sauce ( about 2 Tbsp.) I had a very small slice of lemon pie and pumpkin pie. Gained a pound and a half and then by the end of the weekend was only up by a half of a pound. I agree with you, I do not like the word cheat. I feel good with what I ate and know I am getting ready for my next 5 day fast.

I tried the King Arthur Keto Flour in my former go-to scone recipe, and had the same reaction - the scones were denser than usual, which I could have dealt with, but the taste was really off-putting, a taste that could not be overcome by the Lilly's chocolate chips in the mix. Mine also went into the trash. King Arthur needs to go back to the drawing board.
