Easy, delicious comfort food that's easy on the budget! This simple shepherd's pie recipe uses leftover pot roast and convenience foods to help you create and old fashioned dinner in minutes!

Shepherd's Pie Recipe
Ingredients
leftover pot roast, turkey, or chicken
15 oz can green beans, drained
15 oz can carrots, drained
10.5 oz cream of mushroom soup
1 oz beefy onion soup mix
1/2 cup milk
4 cups mashed potatoes
1 cup shredded cheddar
Instructions
1. Put leftover pot roast in the bottom of a greased casserole dish.
2. Cover with the green beans.
3. Add the carrots over the top. Set aside.
4. Mix cream of mushroom soup, onion soup mix, and milk.
5. Stir until smooth.
6. Spoon over the beef and vegetables in the casserole dish.
7. Smooth the mashed potatoes over the top.
8. Sprinkle with cheese.
9. Bake 30 minutes at 375F.

I made this yesterday, it was so good! I just ate the last of it for lunch. The roast beef I used was marinated in red wine and garlic too so it was extra tasty!

This was perfect and so deelicious! I had left over chuck roast, green beans and carrots. I added sauteed mushrooms to stretch it a bit and improvised using creme fraiche and the dried onion soup. No cheese, not a fan of cheese on something like this. Thank you for the inspiration!

Going to use some of your ideas for our cheap pot roast, i already added corn & g.beans, got a can of carrots that were hiding. I have the boil water yummy tators, outta cheese....uggg. I actually already added macncheese powder cheese to my bag loaded tators BEFORE LOOKING this up! Going to prep, cook tonight so Wed can just put in OUR lil toaster, conv oven & warm cook up!!!???!!!

Lol I do this all the time.. however I keep instant dry mashed potato's etc in my pantry.. word of advice however.. try not to turn your leftovers into a dish that also has leftovers :)

@@cassandraabbey9871 No it's not, nothing to do with being an elitist, Shepherd is sheep, and yes many people make it using minced lamb, so learn how to cook. Maybe carrot soup is made with just leeks. Beef - cottage. lamb - shepherd simple principle.
