You should account for the fact that Lard is pure fat, and butter is 80%fat, 20% liquid. It would be better to clarify the butter first. It is easy to render your own lard, you should try it and use it. It is a traditional ingredient and has many culinary advantages.

I followed the recipe step by step, I even fried them in lard but i did not achieved the bubbles in the tubes. I have also put vinegar and marsala. Any advice?

I've heard if you roll them too thin they won't bubble.

Use a rolling pin. They don't have to be thin. Make sure oil is hot.

sugar cane stalk is what was used, he seems to say some type of cane in the video

He said "river cane" - but sugar cane was grown in the flat coastal regions of Sicily back in the day, so he probably meant sugar canes.

Hi Valory! Actually is vinegar, not wine. Anyway, you could use water instead of vinegar, although vinegar is important to create the bubbles on your cannoli.

You could also use very little baking soda in water to achieve bubbles instead of alcohol.

Saying it's not hard is not very honest. It takes quite some time to cook up a batch and will be gone in a blink of the eye.

This is longest, most drawn out way I've ever seen cannoli made. I make it using a food processor and use a rolling pin. Never had to leave the dough sit.
