Chef and others two both excellent , they have a bucket of oil Close to the wak and take it wit the huge spoon and use it so often that i was surprised as every time u use oil it smears on vegetables meat whatever. So the quantity of animal fat or vegetal is quite important have a look how they act and the oil quantity used

Varied indeed but all cooking italian and french are very varied. I know both ! I just made cantonese rice lokks and taste good but i was low in oil and riche was a little sticking in the pan in the chief wok the rice sautés was just flying off the pan
