I made this bread today, with two minor changes: a little bit of xanthan gum and I baked it in a dutch oven at 230 degrees, like a good rustic loaf (20 minutes with lid and 15 without). It turned out amazing! It had a very good rise and tasted wonderful! Thank you so much for sharing this recipe!

Man, I started making spelt bread like this back around 2009 and there was little to no recipes online for spelt only bread! I had to do a lot of experimenting. Now there is plenty of "How to's" but your's is the best one I've come across. 😊

You can lubricate your hands with olive oil to stop the bread dough from sticking to your hands as you handle the spelt dough.

I made this bread and just loved it, loved it !!! It overflowed in my loaf pan on 2nd rising so had to put the dough into a skillet. I didn't think the quantity was enough to split into two 8" x 4" pans. The result was still deeeelicious! The next one is going to be your buckwheat loaf. So excited I found the recipe for a Hovis!! Loved those when I lived in England. What size loaf pan do you use for the 500g loaves? Thank you for what you do.

Thank you for this delightful recipe. I like this bread very much and made it twice. I used molasses instead of honey ( honey is not stable at high heat and loses its nutrients) 100% maple syrup is another option. Also your conversion is somewhat off. 350 grams is 12.3 ounces.

Thank you again for this great video. I will make this bread for the fifth time today. It is always delicious, easy and healthy and very easy to digest. I usually make three or four loaves the same day and freeze some for later use. Sometimes, make one of the loaves replacing 100gr of sprouted spelt flour with 100 gr of sprouted oats mixed with nuts or seeds or both (I just add a little water as it makes the dough a little dryer). Today I would like to make it with and experiment with longer fermentation, perhaps overnight fermentation instead of the 2 hours second raise. I would like to know if there is an advantage in makind the dough the day before baking, to allow for a longer fermenting time. What do you think? Has anyone tried that?

Thank you for the recipe, it turned out well, although I reduced the water to 300g, because I've been having a problem with my spelt flour, with other recipes. They were all too wet and the dough didn't rise well.

Thank you for the video. I noticed that you had only one rising rather than two. Would'nt two risings give a lighter texture or is the spelt too delicate for that? Would the stretch and fold technique work for regular whole wheat flour and should there be one or two risings?

I tried this recipe today using white spelt only, it was very wet and certainly didn’t look the same consistency of the one in the video, ..it was more like a baguette doughnut I followed through as much as I could, and although it did prove it had no real structure and was like ectoplasm flowing over the tin....any answer me as to what my have gone wrong...?/

An update, I've made three ! First was a flop. But it was to be expected I made mistakes. Second was good. Third was amazing!!! I just have a question for you, as I have made lots of 'starter' from water and flour. How much would I use instead of the dried yeast? And how long would I let it rise etc?

You could argue that technically it is a form of kneading. However it lacks any of the intensity or duration that you would normally associate with kneading dough. It's more like a... quick, gentle massage of the dough :-)

So I've baked a lot of bread throughout my life (in my 40s now) I don't even need to follow recipes. But spelt bread is the one thing I'm having trouble succeeding with, so I thought let me for once watch a tutorial and actually follow a recipe exactly as it is. So I did. So when following this recipe I found that when i added the liquid to the flour it was super dry, and there was a lot of flour left over in the bowl. So i decided to add some more luke warm water a little at a time, i don't know how but it ended up too sticky now, so i added more flour, I kept adding and kept adding and it was i thought ok now, i don't want a dry dough. But the strech and fold thing, didn't work out for me at all. No matter how much flour i put on my hands, i even tried oil, it was so sticky and too soft to pick up in one go and strech much less fold. So I gave up. I just let it rice, once in the bowland a second time in the baking tin. Another thing, this dough raises so much it gets stuck on the plastic foil, so when it comes off the baking tin, quite some is stuck on the plastic and the dough in the tin shrank quite a lot, now it's half the size.

Ok so now that the bread is done let me add to it that other than that it doesn't have a nice shape on top (because the dough got stuck on the plastic foil like I mentioned) the bread itself turned out really good. It was perfectly baked and tastes really good.

Hi Titli, I've tried this recipe exactly TWICE, double checking the water and flour weight, but the dough is always a bit wet and when I let it rise to the top of the tin, it looks like it is on the verge of collapse. When I took it out of the oven it looked like a very large brick. What do you think I am doing wrong?

A: QUICK ANSWER Although it depends on the type of flour that is used, 500 grams of flour is generally equivalent to 4 cups of flour. There are approximately 125 grams in every cup of flour. Converting grams to cups is a simple equation; however, there may be some slight variation in the amounts yielded. This is because you are converting from a unit that measures mass to a unit that measures volume. General all-purpose flour can be converted by dividing the number of grams by 125. Other types of flour, such as whole wheat, bread and rye flour, may require different conversion equations because of the differences in weight compared to all-purpose flour.

Update: I made this, and I found I needed under 1/3 cup. If I do it again, I will start with 4 1/4 cup of flour. You can always add more! But it came out good. A bit dry after 5 days. I think one with a bit of oil would work better, or brush the top of this with melted butter as it comes out the oven. Cover and cool so it steams it a bit. That works for me too. Take out when cool.

The gluten in spelt flour is not as strong as in the flour made from modern varieties of wheat. I also think that spelt flour gives a much tastier loaf!

11 ounces of water mixed with 16 ounces of flour doesnt work - it made a liquid mess. followed your recipe here; 500 g (1 lb) spelt flour, white or wholegrain 350 g (11 fl oz) lukewarm water 2 tbsp honey 2 tsp salt 1 tsp dried yeast I let the yeast activate for 10 min. But after adding the water into the flour, it was like soup. Are you sure the US measurements are accurate? 1 pound is 16 ounces.
