wow, you are a busy couple! I can imagine what it means to live where you live, having a small child, animals and trying to produce as much food as possible in sustainable way. As a grandmother I know how it was for me with small children and a household (always cooking from scratch, doing as much traditionally which was back in the 80s/90s). I truly admire what you do and I would love for you to never feel that you are failing or not doing enough or doing things wrong please! It's all only a trial to do things the best way you can, no matter what others may say (and critics often haven't even tried to do similar things you do!!!!). CONGRATULATIONS on your success with the smoked meat and sausages! Well done! I can imagine how very much you enjoy eating it when you know it's so pure and it tastes so very well. Have a very happy time of celebrations and have a super successful 2024! ;-)

Thank you for this wonderful explanation, these sausages look very tasteful to me! The build with your father-in-law has been a great success too, and the only (to me..) remarkable thing is: the diagonal beams on the doors are placed UPSIDE DOWN..haha. Enjoy the family at these special moments and relax.:-)

I love the idea of placing rocks in between the fire and meat. I've never seen that done. Very ingenious. I appreciate the pride, that shines through, in producing your own foods. I've been 6 weeks traveling across the US, visiting friends and family. Every stop I've been sharing meat that I've raised or harvested. My wife and I processed everything ourselves, all while living in an RV full-time. To me, it means more to share the bounty of our hard work, than to buy some cheap gimmicky product. It was well received by all as well.

I cannot say enough thank you for all you say in your videos about meat and life.(book) I changed my diet from one day to another after your video, being vegetarian for 25 years to carnivore again. I was carnivore for 33 years, (25 vegetarian), now I will never leave this diet again. I'm 58. I'm grateful for my mother to give me the only right food when I was a child: meat. Thank you, god bless you

just wanted to say i love your video's. i have went back sines i found your channel and started watching for the beginning. keep up the good work. I'm a retired sailor and have been starting the journey of homesteading . i have lived in rural farm country my entire life. I'm not totally self sufficient by far but become closer every day.

Alder is a very popular wood for smoking here in SE Alaska. We also have some crabapple trees, and some people have used that, too. I don't have a way to smoke meat, but I put up a lot of fish in jars and cooked in a pressure cooker. It keeps for many years. Sockeye salmon is a subsistence food in the small communities in Alaska; it cannot be bought or sold except for commercial fishermen. I have no way to fish, but whenever someone gives me a few fish, I will put it in 1/2 pint jars (about 4 ounces) and then I give some of these to elderly people who can't eat a large jar before it goes bad. All I ask is the jar back when they empty it, so I will have jars for next time. It is good to take care of one another.

If you get some wood strips about an inch wide and put them over the cracks on the outside walls of the smoker it should help keep smoke from coming out there, it's called board and batton siding here in Canada

This video was outstanding, I love it, making smoked meat is so awesome, I know it’s delicious. I wish we had food sharing abilities though out phone or tv. I would share my favorite Christmas things with y’all and you could share with me, oh and I love that sweet little Ivor he is growing up so fast. Life excites him ! The meat looks fantastic and it is quiet an accomplishment, from grass to table! I imagine boiling the tongue and then smoking it was a great way to prepare it. I really enjoy the Yule segments and everything that you share. God Jul to you and your family.

Wow, I built a smoker just like yours!! You can cold smoke and/or cold smoke! I am really happy with it just haven't had much time to smoke in the last two years. So hopefully more good smoking (deer jerky, etc.) in 2024!

I could almost smell the delicious aroma of the smoke and taste the tender meat... and I'm a vegetarian. That is to say how yummy all of this seems. Made with care, love, mindfulness, consciousness. It is indeed golden nuggets of sovereignty and freedom from you homestead and lifestyle. You should be proud of all you guys are and do! You have accomplished so much at Talasbuan and I know this is just the beginning of so much more still. beautiful video once again. I ofcourse looked at al the julvideos as wel. The compilation at the beginning of the video is very nice as wel. The meat looks delicious I can almost smel it. My husband smokes fish in the summer and fall, eel he catches himself ( witch is forbidden in the Netherlands. You may catch it but you must put it back, he does put the small ones back) So dont tell anyone 😬. And sometimes he buys gurnard or mackerel from the fish market near by ( directly from the fishingboats, so you could call that local also). We then invite some friends and enjoy the fish with a nice beer or a glas of wine, always a succes. Have a good new year, take some time of and I will be looking foward to another video

I really like that smoker you built👍🏻I've seen some people use a detached fire box/stove like you are about to finish up, and they seem to work very well for them. All the meat you smoked looks really really delicious, especially the sausage😛 Very nice vid you guys .... Ivar is trying his best to help out. My grandfather was a butcher who built his own meat processing plant by his own hands. He butchered and processed all the meats and sold them to customers and some restaurants and stores in the surrounding area. He also had a smoker at one point where he would smoke the meat and sell it sort of like a food truck stall you could say. My childhood I grew up always there after school or during the summer all day. He made his own sausage which was a big seller. The only thing was his animals weren't from his land/farm, but were brought in and stayed in a pin in the back or deer brought in after hunting to be processed.
