Although sesame chicken is a westernized Chinese take-out dish, nobody can say no to these crunchy, nutty little bites of chicken that are covered with a glossy sauce. This dish can be pre-prepped in a large batch and assembled with so little effort. You can make the sauce ahead of time. It will last a few weeks or 6 months in the freezer. You just use it as needed. The chicken can be breaded and deep-fried for the first time. It will stay good in the freezer for six months. Take it out of the freezer whenever you want to eat it again. Directly double fry it without defrosting. Of course, the frozen chicken will take a little longer to fry than when it is fresh.

INGREDIENTS (serves 3 with some white rice)
To marinate the chicken
1 lb (450g) of chicken breast or boneless chicken tight
2 cloves of garlic grated
black pepper to taste (Amazon Link: geni.us/black-...)
1.5 tsp of soy sauce (Amazon Link: geni.us/light-...)
1/2 tsp of salt (Amazon Link: geni.us/pure-s...)
3/8 tsp of baking soda (Amazon Link: geni.us/baking...)
1 egg
3 tbsp of sweet potato starch (Amazon Link: geni.us/sweet-...)
For the sauce
2 tbsp of Honey (Amazon Link: geni.us/unfilt...)
3 tbsp of brown sugar (Amazon Link: geni.us/brown-...)
2.5 tbsp of Soy sauce (Amazon Link: geni.us/light-...)
2.5 tbsp of ketchup
1 tbsp of vinegar (Amazon Link: geni.us/distil...)
2 tsp of starch (Amazon Link: geni.us/sweet-...)
3.5 tbsp of water
Others
1 cup (130g) of sweet potato starch to coat the chicken (Amazon Link : )
Enough oil to deep fry the chicken
1 tbsp of sesame oil (Amazon Link: geni.us/roaste...)
1.5 tbsp of toasted sesame seeds (Amazon Link: geni.us/white-...)
Diced scallion for garnish
INSTRUCTIONS
Cut the chicken into bite-size pieces. Marinate it with garlic, soy sauce, salt, black pepper, baking soda, egg white, and 1/2 tbsp of sweet potato starch. Mix thoroughly and rest for 40 minutes.
A quick method to make sesame chicken extra crunchy: 1. Spray a little bit of water on the starch.
Give it 10 seconds to allow some of the starch to clump up into little balls; 2. Fluff the starch by using a whisk; 3. Spray more water, wait for 10 seconds and whisk it again; 4. Do this four times in total. The starch lumps will give some extra crunch to the chicken.
Coat the marinated chicken with the starch. Make sure to shake off the excess flour. Let the chicken rest for 15 minutes before frying.
Heat the oil to 380 F. Split the chicken into two batches. Fry each batch for a few minutes or until lightly golden. Remove from the oil and let them rest for 15 minutes.
While waiting, remove the starch clumps from the oil by using a fine sieve.
Keep the temperature at 380 F. Double fry the chicken for 2-3 minutes or until golden brown. Take the chicken out and rest on the side. Double frying will stabilize the crunchiness so it last longer.
In a large bowl, combine the brown sugar, honey, soy sauce, ketchup, water, vinegar, and cornstarch.
Pour the sauce into a large wok and stir over medium heat until thickened.
Introduce the chicken back into the wok, along with a drizzle of sesame oil and 1.5 tbsp of toasted sesame seeds. Toss everything until the chicken is coated nicely.
Sprinkle some diced scallion as garnish. Serve with white rice.

Lelik...I did the same with Indian food. The best restaurant portioned the buffet so much that I decided never to return (I started making many recipes that my husband likes a lot). In 2022 that restaurant decided to stop take out altogether!

I have her wok, I've used it regularly for quite a few years (since it first came out) and IT'S AWESOME!! I consider myself a pretty damn good cook, and love her wok. It's great, easy to clean, and a perfect size for making a dinner for my family of 4.

I love the wok as well! It's one of my favorite pans that I own. And the lid is great for steaming and covering foods without drips. I'd definitely recommend it.

Use one whole egg for this recipe please. I wrote 1 egg white is because I copied my old recipe and forgot to change it by accident. This new recipe uses more flour, so you will need 1 whole egg instead of only egg white.

Thanks for adding the information about how long the recipe components can be stored in the freezer, as a single person, it is really helpful. The written recipe is sometimes wrong, for instance the recipe says spread bottle while I clearly heard you say spray bottle when clumping the starch. I appreciate your offerings.

Just made this…I didn’t have the sweet potato starch, so I used corn starch and it turned out wonderfully! Very flavorful and nice and crispy, and not too sweet like the takeout versions! I used chicken breast tenderloins which were very tender. Can’t wait to make it again!

I just made this recipe for dinner tonight and it was absolutely delicious. I used regular corn starch and it fried up nicely and I only fried once until golden brown and it was still super crunchy after I added my sauce. Next time I will double the sauce recipe because I like to pour some over the rice 😊

Now I know why when I get these dishes from a restaurant, it seems like the chicken has been overcooked. It's because it has. They're overcooking it in one of the two frying phases. There used to be an Asian restaurant near where I work that the chicken was never overcooked. It took a little longer to get the food and it cost more than the other places, but the quality of the food was more than worth it. I really miss it.

Spraying the starch with water is ingenious! What a game-changer; I can only find finely-dusted starch at my tiny little local Filipino-Mart, but once I followed this technique of spraying and fluffing the starch, my Chinese-American style deep-frying projects have improved ×100!

I normally use flour but will definitely try the potato starch instead. It looks delicious!!

Excellent recipe...made it this evening. It takes a while, but it's definitely worth the effort. One tweak I'll do from now on is increase the sauce by one half, as there wasn't enough to completely coat all the pieces. I don't like it swimming in sauce either, but each piece needs the love.
