When I started my sourdough started a couple of months ago, I didn't throw out any discard, I fed it like I did what was kept. By the end of a week with 1 rye starter and 1 wheat starter, I had an 8 quart canister almost completely full. When it was time for it to rest in the fridge and do the weekly feeds, I froze those 8 quarts of mixed rye and wheat discards. I did use some in a pancake batter and OMG the BEST pancakes ever.

I love as many starter recipes as you can give because I am impatient and don't have time to let things rise, so this is great!! Thank you! It was super simple to make this morning. Delicious! I forgot to say we put ours in a medium iron skillet and that helped them puff up a little more being against each other. (for 7 biscuits just use 1/4 cup more starter and flour and 1 more tbsp butter.

This time I made a sourdough starter from the Elliot Homestead. It is a tacky starter you don't have to keep feeding, you keep in the fridge, and feed a small portion 5 hours before you want to use it. You should check it out. You might fall in love with it like I have.

When I kept sourdough starter I never tossed the "discard" I simply made extra items which I gave away to elderly neighbors or families with children. I also made lots that I froze and accumulated so when I had about 10 to 15 items I'd take it to the senior citizen center so they could each have an extra treat.

Mine didnt rise, I'm not sure if my discard was too heavy or maybe a case of old baking powder ☹️. They still taste great just more like sourdough cookies hahaha

We are using unfed discard which doesn’t have enough power to make dough rise. Discard recipes and some that use fed starter will also include a small amount of commercial yeast as well. 😊

Question on the starter, right now I’m discarding a 1/2 cup of my starter but this recipe calls for 1 cup. So do I save 1/2 cup from today and 1/2 cup from tomorrow in order to get 1 cup? Gary won’t be ready until Monday probably.

Once he’s really active you should feed 1/2 cup and have about 1 cup of discard. If you’re not there yet, save 1/2 cup today and 1/2 cup tomorrow. 😊
