Further into the video I do see they have a Maxwell Street polish on the menu. It's a polish with grilled onions (sometimes grilled for hours--it's an art form) & some good mustard on Italian or French bread. Delish. A couple of triples took care of that Chicago dog. Those sport peppers have some kick.

Born & raised & lived in Chicago most of my adult life. Retired in Az. now & miss those Italian "beefs". There's a few choices here in Arizona but obviously not nearly as many as Chicago. Also a bit pricier out here. Mark Sellers looks like he could still put the pads on & mix it up.

That beef san isn't even close to a Chicago Italian Beef. First, you'll never see any beef joint in Chitown grill the beef on a flat top, ever. The beef is roasted in its own liquid and then allowed to chill overnight in the fridge. The next day they remove it from the fridge and slice it super thin. Once sliced,the beef sits in a vat of the thin beef jus which is loaded with all the right spices. When you order, they take the bread from a bag of sliced Torano bread and hold it over the vat of beef and fork it on to the bread. If you order it dipped, it'll be soaking wet and dripping all over the place. It's a super messy sandwich but well worth it. The fact that the beef sits in the vat of beef jus lets it marinate until you order your san. Flat topping the beef is an automatic no go, end of story. Also, no Chicago Italian Beef has onions on it, ever. So the beef at South of Wrigley is a total fail. The hot dog is missing onions, mustard, and celery salt. And last who puts hot sauce on a Chicago Hot Dog??? You seriously need to visit Chicago and try Al's, Portillos, and Johnnies. Once you do you'll see exactly what I'm talking about. The classic Chicago Beef is so easy to make as well as the hot dogs it's silly. You can also order the natural casing Vienna Chicago Dogs right from their web site. You can also buy Portillos to be delivered to you wherever you live. Also, if you come to Chicago, order a combo with sweet and hot dipped. It's grilled Italian sausage topped with Italian beef and then fully submersed in the jus. Then they top it with homemade giardinare and roasted sweet pepper. Lastly, if you do come, don't put hot sauce on your hot dog, you'll literally get thrown out if you do. I'm not kidding. We take this stuff very seriously here. Cheers boys...

The beef on the grill could have been for a Philly cheesesteak. Don’t know if they grill them. The hot dog did have mustard relish and celery salt. By the way, I ordered onions on it myself. I like onion. Lastly, I put hot sauce on just about everything. Give it a try.
