Well AB, I did end up making this, didn't have the pinto beans I thought I had. Since my bean bin was full, thought I should use what I had on hand. Ended up using baby lima beans. A tasty bean, but doesn't take as long to cook as pintos. It's only me eating them, so cut the recipe in half. Delicious. Next time pintos. I mostly use pintos in my grandmother's minestrone, from the Milan / Genova area of Italy. So good. Love your videos, thanks for sharing. Love your attitude AB, just honest good guy.

Perfect for colder weather. I also love that you are doing recipes that you can do on a budget. Dried beans are so much cheaper than the canned stuff; peppers and turkey add flavor without breaking the bank and rice is a great way to feed a lot of people. I also love that you are being creative about eater a little healthier. Even the chicken on the counter is happy (maybe because you used turkey).

I made these today. I cant eat onions like you do, so I had a smaller amount, but I did used minced onions to it and some minced garlic as well (again, right now I have to watch my intake of onions and garlic), but I definitely used the garlic powder, and I also used a green bell pepper, and I used smoked turkey necks that I got from Walmart. I cooked these in a cast iron dutch oven that I have had for years. Soaked my beans overnight, it took 2 and a half hours top to cook these beans perfectly. I never use cornstarch but I used a teaspoon of Bobs Red Mill Organic Corn Grits to thicken the sauce, and works perfectly. These beans today made me cry, I could only think of my mother when I ate them. OMG!!! So simple and so delicious. I did not add any salt because like you I have to watch my salt intake. I use Spike no salt seasoning. And just FYI, take it or leave it, cheese has an amazing high amount of sodium. I am going to try your crockpot lasagna but I will use plant meat and vegan cheese, and vegan ricotta cheese and let you know how it works. I always use plant meat in my spaghetti sauces, and I don't eat regular cheese anymore. So glad I found your channel, going to add one of these turkey necks to the Kale I will make later this week. Also, I used low sodium chicken and vegetable broth. The best pinto beans I have every made.

Everybody probably knows that if you do the quick method with the beans you have to drain and rinse the beans before you cook the beans. My mom taught me to boil my seasoning meat before adding beans, peas and greens then keep the broth. From there, add chicken broth or water. Additionally, if you use a non-processed salt like Celtic Sea Salt, Gray Sea Salt or Sel Gris, it adds the saltiness you need and adds flavor. You can even add this salt after the dish is done. This dish looks good. Thanks for sharing.
