As a Indian I can totally feel the aromas and taste but instead of saffron we add turmeric for flavour. I just Love chickpeas.

Isnt turmeric do more for color, then taste?
@barnalidebbarma53442 жыл бұрын
@@Vednier yes but a teaspoon or pinch of turmeric won't over power the colour or taste of the dish as many people can't afford saffron because it's costly

Actually, you can make a chickpea stew out of everything. I'm from Spain and we make it with cod and spinach, with chorizo, with vegetables, with garlic and paprika... you can eat it with everything. And while it's true you can get very good canned chickpeas, I think you really get the best flavour and texture by buying them dry. All you gotta do is soak them in hot water at least 12 hours before cooking, and let them cook for 2-3 hours without letting them stop boiling, starting to cook the chickpeas with lukewarm water.

Moroccan and Spanish grandmothers, as well as those from other Medierranean countries, were the queens of vegetarian and vegan cuisine, long before its health benefits were even suspected. They made do with with the vegetables and legumes they had on hand and skilfully used seasonings and aromatic herbs to give their stews their personal touch of flavour. Meat, chicken and even fresh fish were luxuries reserved por special occasions. Affectionate greeting from Spain.

Thanks so much for your recipes! I learned to make cocidos from a woman coming from Andalucia. I usually order the bone of a ham at the butchers (I live in Germany, and they mostly give it away free of cost) and add it to the stew (...take it out of the pot a couple of minutes before the stew's ready). This gives a nice flavour to it. It's not a vegetarian stew adding this bone, but maybe someone wants to try it out.

Hi Albert, wishing you a very happy New Year and positivity for a much much better 2021! Just wanted to let you know that I’m really digging your channel, have shared it with many friends, and this recipe in particular is my #1 favorite... I’ve made it at least 5-6 times already and the whole family absolutely loves it! I’ve traveled and cooked professionally for many years in my younger days and that said, I must admit that I went a little rogue the last few times I’ve made it... always doubling the recipe, adding 2 round Tbs of capers, 1+ Lbs of chopped tilapia and/or trout (at the last few minutes of cooking time) and tonight, I added 2 cups of finely chopped wild winter kale, that I picked while out for a walk today. Thanks so much for the inspiration and your positive vibes. So needed in these crazy times. All the best and looking forward to checking out more soon. John

Tried this last night. My wife and I both enjoyed it. I ended up using 4 cups of water... actually, chicken stock. I think I can add more bell peppers with the added liquid. I also used two cans of chickpeas ( 2 times 439 grams ). Otherwise I stuck to everything else, including the cooking time. The outcome was more soupy than stewy, which was fine with us. It was a light and inexpensive dinner for us, which we liked. Thanks for posting. I did order the Golden Saffron for making more of your dishes.

I just came across this video and loved this recipe. I’m planning to make it but I will substitute the yellow potato for sweet potato and the water for chicken broth. I love to learn recipes from other countries and give them my own little twist. I subscribe to your channel because I really like the way you present your recipes. Thank you and keep up the good job!

First time, prepared per recipe. Delicious!2nd time, I improvised. Added 3 potatoes ( needed to feed more people) and i had about a 1/2 c. left over marinara and I added 2 heaping T of olive tapenade and about 1T lemon juice. This is such a good recipe and lends itself well to improv

You’re legit. Hate it when some people start using canned stuff to make the meal. Thanks. ❤️❤️❤️❤️
