Ingredients:
Poha / Flattened rice - 2 cups
Sprouts ( Moth / Moong / both ) - 1 cup
Vegetables of choice ( Carrot, peas, bell pepper, potato/ sweet potato/ boiled corn ) chopped / grated - 2 cups
Onion - 1 chopped, optional
Tomato - 1 chopped
Green chili - 2, chopped
Curry leaves - 1 spring
Lemon juice - 1 tbsp or more, as per taste
Coriander leaves - handful, chopped
Mustard seeds - 1/4 tsp
Fennel seeds - 1 tsp
Roasted peanuts - a handful
Jaggery powder / Sugar - 1 tbsp or according to taste, optional
Hing - a pinch
Salt - as per taste
Turmeric powder - 1/2 tsp
Oil - 1 - 2 tbsp
Sprout Poha Recipe | Healthy Poha Recipe for weight loss
Sprout Poha is a wholesome one-pot meal recipe. This Healthy Poha recipe is another version of the much-loved Kanda Poha recipe. A preparation of the traditional Poha differs from state to state or even from family to family. So you can tweak the Sprout Poha recipe as per your preferences.
Sprout Poha is a nutritious yet flavorful recipe. All you need is the sprouted beans and a few vegetables. To prepare Healthy Sprout Poha, prepare the tempering of mustard seeds, green chili, curry leaves, and hing, add onions, and saute them for a while. Add vegetables and sprout, and cook for a couple of minutes. Add soaked poha, season it, and cook it for 5 - 10 min. Lastly, squeeze a lemon, add jaggery powder and chopped coriander, and Poha is ready to serve. You can add cashews, raisins, roasted peanuts and seeds, pomegranate, chopped onion, tomatoes, and raw mango, as a topping. You can also add grated carrot, beetroot, or fresh coconut.
The essential part while preparing Sprout Poha is soaking poha. I used to rinse them under running water in a strainer. Avoid soaking poha in water for a long time, otherwise, poha will absorb access water and turns sticky and mashy.
For the no onion, no garlic poha recipe, skip the onion from the recipe.
Poha is an easily digestible form of raw rice. Also, Poha is a good source of carbohydrates, packed with iron, rich in fiber, a good source of antioxidants and essential vitamins, and is gluten-free. So Sprout Poha is one of the healthy meal options. You can add them to your weight-loss diet too. You can enjoy Sprout poha with green chutney or fresh homemade curd too.
