Ingredients: 24oz pasta 16oz whole milk 1 pint heavy cream Chicken buillon seasoning (powdered) EVOO Salted butter Sour cream (½ cup, split) 2 eggs 32oz Cheddar cheeses (mild, med, sharp) 8oz block Mozzarella (slices & shredded) Seasoning mix (paprika, salt, garlic powder, onion powder) Cracked peppper Directions: Fill large pot with water, 2 capfuls chix buillon, 1 tbs salt, plus EVOO and bring to a rolling boil. Add 24oz pasta & stir. Boil/cook for 7-8 minutes (until al dente). Strain pasta & pour into large mixing bowl. Add a large serving of butter (2 tbs) and stir to coat noodles. Add room-temp shredded cheddar cheese while noodles are hot (approx 2 cups). Add paprika plus seasoning mix (bouillon, salt, garlic & onion powder) plus fresh cracked pepper. Stir to mix. Add several spoonfuls of sour cream (approx ¼ cup) Set mac aside while making custard. Preheat oven (375° for glass/metal baking dish, 350° for cast iron). In medium mixing bowl, add 2 eggs and whisk to break up the yolks. Stir in 1 pint heavy heavy cream and 16oz whole milk. This should create a nice custard consistency. Season the custard mixture. Add sour cream to mixture (approx 2 tbs) and mix. Coat/grease baking dish (heavily) with salted butter. Layer half macaroni mixture in baking dish. Pour half custard in with macaroni. (Optional step) Add room-temp mozzarella slices on top, top with sprinkle shredded mozzarella (approx 1 cup). Sprinkle with seasoning. Top with shredded cheddar (approx 2cups). Add remaining mac to the dish, plus remaining custard. Use wooden spoon to “press” custard into mac casserole. Add more shredded cheese (approx ½ cup each, mozz & cheddar). Top with more seasoning for the color, plus fresh cracked pepper. Bake! 45mins for baking dish, 30mins for cast iron. Let cool for approx 15mins prior to serving. Tip: Line oven in case of spillage.

Made this last night and the technique of mixing the cheese with the noodles is a keeper. The pockets of cheese is exactly what I love about mac n cheese. Also, love that her recipe uses a cold or room temperature custard with no flour. This is definitely a keeper.

My dear I make a cheese sauce because I want my mac and cheese to be cheesy/creamy. Otherwise, too much southern mac and cheese is too dry.My nieces call it cheese and mac because they say it is so rich in cheese. Further, southern recipes did not use a several different cheeses. They used only one cheese. Northern chefs wanted to kick it up a notch by using several different cheeses. I don't mind spending good money for my food, but it's not necessary to use $100 worth of cheese to make this side dish. Further, I am not going to put any egg or sour cream in my recipe because it looks like scrambled egg in the finished dish.

@@angelfrmheaven block cheddar. If you can find Hook cheese mix it with block cheddar. Hook cheese is real old fashioned back in the day cheese. Will give you that authentic flavor you are looking for. Oh! The cheddar cheese comes in a rectangular block shape and the hook cheese sometimes look like a slice of cake, but I believe it comes in the same rectangular shape as well. 🤞 good luck.

This is the best Mac and cheese recipe. I cook myself and while i don't have your experience, i used what i know to make some adjustments to accommodate what i have in my house readily. I used rotini since all the elbow macaroni was sold out (the spirals have pockets that hold more cheese 🤤 so i wasn't mad at the swap), i have sazon rather than seasoning salt. If you think about it, it's not too far off. You get the color from the achiote and all the flavor from the other seasonings. I used a little less cream and more milk since it was all i had. I used two eggs, a whole 16 oz container of sour cream, and Mexican melting cheese in between the pasta layers along with the cheddar. If anyone's used Oaxaca cheese, well iykyk 😏. Thank you for sharing! The dish is always a hit 🎯

I really appreciate this remake! Clears up a lot of questions we had from the first one. The simple cheddars, and the 2 layers when putting it together makes this so much easier to just throw together now. Also, the cooking times in different dishes is a big help. Thank you so much!! Finally someone who does Macaroni Pie like we do in the Caribbean. My mum does it the same way but it's a dump and go. Add the milk, cheese, egg, seasonings etc in one dish and mix together. The heat from the macaroni just melts and brings everything together! Definitely the Caribbean way!

Last Black folks orginate from Africa. Enslaved Africans were constantly trading from the Carribean throughout the South....and vice versa. So there will be similarities in the culture.

I love Dani's energy. She's so southern and down to earth as well as gorgeous! I tried her recipe for cooking yams in a pot, and they were a HIT for Thanksgiving! I made them again for Christmas and again another hit! Dani, thanks so much for creating this channel. I will make the homemade mac and cheese recipe. I always wanted to learn how to make mac and cheese creamy. I saw various recipes online; however, the ingredients for creamy mac and cheese did not look right in the pic. Dani's mac and cheese is exactly the texture I want. I always melted the cheese and poured over the cooked noodles. I am going to layer the dish per Dani. I will also add two eggs instead of one. I never used 8 cups of cheese will do that as well. I will use a giant baking pot for layering. Thanks, Dani. You're awesome!

I've made this twice already. Once, the way mama did it. The second time, I used the chicken and tomato bouillon, and added some ground beef, some cooked onions, and made a kind of cheeseburger mac and cheese and it was SOOO good. ♥

My mama (she was black) made something very similar. She never grated the cheese: she sliced it thin, and she only used cheddar. She made it like lasagna. Layer of boiled noodles, a layer of pats of butter, a layer of chopped onion, a layer of salt and pepper, then a layer of cheese, and then repeat as many times to fill the pan. She topped it off with the custard mix: eggs, cream and milk, and another layer of cheese for the topping. Best mac and cheese evah! So I am going to try your recipe with the bullion and sour cream in a cast iron skillet. Can't wait! By the way, you need your own cooking show. Your personality is addictive and AMAZING!!! This is how I was taught by mom to make Mac N Cheese with a few differences. I use cream cheese instead of sour cream and I also used velvets cheese brick and cut into dice chunks in addition to the mild and sharp cheddar cheeses. Other than that spot on!

The sour cream ingredient I learned from family in South Carolina. My side did the one cheese. I LOVE the chicken bouillon that she used. I’m going to try that next time and the one cheese. I use like ten cheeses (for special occasions). But straight forward old school is best.
