Little tip, in many instances the Planar setting on the Decimate modifier can do a lot of the face dissolving for you

Thanks! For your game you could use a lower ratio value in the decimate modifier to make it even more low-poly :)

This can be answered by adding a Triangulate modifier but I didn't find it necessary for the sole purpose of quickly modeling a stylised rock

I tried it and not even the first step works! When I add subdivision surface, the cube disappears. I tried just subdividing but then the textures don't work. I did everything like in the tutorial. Tried restarting blender, my pc, retried the rocks countless times. Still doesn't work

Try going to edit>preferences>viewport>subdivision. Here, untick GPU subdivision. This should solve your issue. Keep me updated!
