This salad is so delicious you can make chicken on the side and enjoy it as a full meal.
It’s so healthy.
INGREDIENTS:
1 large sweet potato
salt and pepper to taste
1 tsp olive oil
1 medium avocado
1/2 cup corn kernels
1/2 cup black beans
1 cup green bell pepper diced
1/4 cup chopped red onions
CILANTRO DRESSING:
1/3 cup olive oil
1 tbsp honey
1/4 medium lemon
1 clove garlic
1/2 tsp salt or to taste
1/2 jalapeno sliced
