Eggless Sweet Potato Muffins
Muffins without egg / Muffins without Milk / Muffins without Butter.
These Sweet Potato Muffins are so easy to make. They are soft, fluffy and delicious.
Makes 6 muffins.
✅ Ingredients:
1 cup (200 g) Sweet Potato, cooked
1/4 cup (50 g) Superfine Granulated Sugar
1/4 cup (60 ml) Vegetable Oil
1/4 cup (60 ml) Water, room temperature
1 tbsp (15 ml) Lemon Juice or White Vinegar
1 ¼ cup (175 g) All-Purpose Flour
1 ½ tsp (6 g) Baking Powder
1/2 tsp (3 g) Baking Soda
2 tsp (5 g) Cinnamon Powder
