if you want a peculiarly sweet crust without a huge amount of additional sugar, you might try this crust recipe without the sugar and substituting half of the flour for malted barley flour. The crust won't be nearly as sweet as before, but it will save you about 50 calories per slice (1/6th of the pie.) You can also cut some of the sweetness and improve the nutritional value of the dish by eliminating almost all of the sugar and, instead, bringing out the natural sweetness of the sweet potato by roasting it in the oven. All you have to do is make sure that your sweet potatoes are fresh and moist with tight skins and firm flesh, then you preheat the oven to 375 F and poke some holes in your sweet potatoes with a fork before baking them for 45 minutes or until they are soft and mushy on the inside when you squeeze them with tongs. Let them cool for a bit before cutting off one end of each sweet potato and squeezing the flesh out like a tube of toothpaste. Another upgrade (I know I sound super critical of this recipe, but it is a good foundational recipe for producing what is essentially a set custard pie) is to make sure that all of the spices that you use are fresh-ground from whole. That means that all of your cinnamon was a stick of bark before you started working and the nutmeg was still a very large seed. You can still use pre-ground ginger, if you want, if only for the inherent difficulty in actually making ginger into a powder or a smooth paste.
@trackgrad089 жыл бұрын
+Robert Coffey the next time I make a pie I'm going to take your roasted potato advice. It'll definitely keep a lot of the nutrients and sweetness in and in my opinion, makes the potato more tender.
@mndlessdrwer9 жыл бұрын
trackgrad08 it did for mine, just make sure you taste the sweet potato mash to make sure it doesn't still need sweetening, depending on how sweet you want your pie. That method also requires more liquid be added to make a silky pie. I just went with another tablespoon of butter and a quarter cup of milk.
@trackgrad089 жыл бұрын
Gotcha! Thanks for the tips. Can't wait to see how it comes out.

Rosie I think you are trying to make me fat, and I love it! The ingredients in this pie spell awesome. One thing though, you should try baking your potatoes instead of boiling them, it really gives you a richer tasting filling (it caramelized the sugars in the potato). And, depending on the potato, you made not need as much sugar. Love you as always. Keep up the good work.
