Teff flour is produced by grinding teff grains into a fine powder. It has gained popularity in recent years due to its nutritional benefits and unique properties. Teff flour is gluten-free, which makes it suitable for individuals with gluten sensitivities or celiac disease. It is also rich in nutrients like iron, calcium, fiber, and protein.
Teff flour has a slightly nutty and earthy flavor, and it can be used in a variety of culinary applications. It's commonly used to make injera, a traditional Ethiopian flatbread, but it can also be used in baking for bread, pancakes, muffins, cookies, and other baked goods. Additionally, teff flour can be blended with other gluten-free flours to create well-balanced gluten-free flour blends for different recipes.
Here I tried one of my Indian Version of dosa using Teff flour. Hope you enjoy this recipe
Ingredients:
Urad dal - 1/2 cup
Methi/fenugreek seeds - 1tsp
Teff flour - 2 cup
Salt to taste
Water - 2 cup or as needed
Oil/ghee for roasting

Does it rise/get fermented without adding additional dry yeast? That’s pretty amazing.

Yes it will rise well without yeast. It contain black gram(urad dal) it helps to natural fermentation process. Also warm and consistent environment aids in faster and more reliable fermentation😊

Always eat what's locally grown. It's good for our body... Why go for an Ethiopian Seed which is so costly....Our Indian market is full of nutrition and healthy food...Eat that and I bet that so many varieties are there that even a Life time is not enough 😅
