With respect to you guys for loving of Thai curry. I am really appreciated you for making the way to cook Thai curry though it is not totally the real method so why I have to pay respect to the chef that he can make it come out tasty and makes the followers try it and like it. May i give some advice a little. First, you just fry a half box of 250 ml of coconut milk till there is some oil separated a little then add the curry paste and saute about 2 mins till its aroma come out then put the left coconut milk and the stuff you have. The last step if you can provide to make more aroma is to add 4-5 kaffir lime leaves and a small bunch of sweet Brazil leaves, I am definently sure you can not find it in local but these things will surly make the real taste and more tasty but it dosn't matter. Realy like your recipe it looks yoummy. Oh! really don't need lemon in curry but need in the spicy soup. Hope you guys won't feel irritated my recommendations

For the curry paste u missed out on shrimp paste, cumin, coriander seeds, fingerroot and dry red birdseye chilli is used instead of the fresh ones. Also u didnt use put fish sauce. Fish sauce is used and not soy sauce. Fish sauce is the key ingredient in making if this dish, if u dont use it then the flavour wont be as good. Shrimp paste and fish sauce r must for this dish. Fish sauce for seasoning and shrimp paste for making the curry paste.

Interesting recipe. But the veggies need a lot longer to cook than the prawns. Add the prawns towards the end of the cook.

No that's what happens when you don't only use the outside of ginger, it has a very fibrous interior. you should grate just the outside if that bothers you, however some feel that to be wasteful. This is a lazy variant of a thai red curry, which is fine as its tasty in any variation.

You retain the Vein which is gut of the prawns full of microbes dirt as you retain the SHELL! 10 Min will make them rubbery I would put in last 4 min and close gas for 3 min self cooking

I think the jury is still out on MSG. I've read so much conflicting information on MSG it's hard to know what to believe. Some argue it's bad for you. But others have argued that it's simply a flavour enhancer (like salt) and the bad rap stems from anti-Chinese hysteria. Apparently Chinese eateries in North America were quite successful back in the day and many didn't appreciate that success. And this anti-MSG campaign was used to try and destroy Chinese-run businesses. I have no idea what's true and what's untrue though.

aren't prawns way too overcooked after 10-15 minutes? From what I've learned, prawns need like 2 minutes cooking, after that they're getting tough.
